All our pizza bases are made using sourdough. Sourdough is made from natural occurring yeast and bacteria in flour. No instant dry yeast is used. In traditional sourdough recipes, you will find three ingredients: sourdough starter(which consists of flour and water), salt and flour. Their is no yeast, no milk, no oil and no sweeteners. it's as natural as you get when it comes to bread. The benefit
s of sourdough:
*No preservatives, reducing agent oremulsifiers.
*Contains of lactobacillus- the good bacteria in yogurt, kefir, sourcream, buttermilk, kimchi, etc
*The long fermentation during breaks down much of the phytates that bind the minerals in grains, there by making minerals redily available to your body.
*Starch in dough is lightly predigested, making digestion much easier.
*Lactobacillus in the dough helps feed the good bacteria in your digestive system, so they can continue to fight off the bad bacteria.
*A large portion of available glucose is devoured in the fermentation process. Hence, sourdough produces as much a much lower sugar in blood sugar than any other bread.
*The long process also breaks down many of the gluten proteins into amino acids which are essential nutrients.
*Lactobacilli breaks down flour's complex carbohydrates into simple sugars Rich in B vitamin. sourdough helps the metabolism of proteins, carbohydrates and fats. It also support immune system health.
