Recipe Post:
Vegan spicy provolone cheese :)
Ingredients:
2 Γ 200 ml regular coconut milk (I've used Dabur Hommade)
15 g nutritional yeast (just roast regular yeast on low flame for about 7-8 minutes, it's deactivated and ready to use)
10 g agar agar
1/2 tsp salt
2 tsp choicest spices (I've used the Italian mix + Chilli flakes)
1 tbsp tapioca starch mixed in 2 tbsp water (optional, this makes the cheese firm enough to grate and use for grilling)
1 tbsp lemon juice
At the outset, DO NOT leave the kitchen while you're working with this cheese, it takes a second to start burning!!!
Pour the coconut milk in a non-stick vessel and add the nutritional yeast, salt, spices, agar-agar and lemon juice and boil at medium heat. Let the mixture just about come to a simmer and reduce the flame to low. Let it boil for about 5-6 minutes. Add the starch + water mix and stir vigorously. The mixture will get really thick. Be careful to scrape the sides down thoroughly otherwise, it burns in a jiffy.
Take the mixture off the flame and set in a heat-proof pre-greased vessel and allow to cook completely before refrigeration.
PS: You'll need to try the substitutes by yourself. I used what I had :)
