Myosin - a protein found in fish muscle/ head, under favourable conditions during cooking,forms a gel network and creates an interesting texture in currys and sauces. These sauces are delicate and lush. Cooking with fish head has opened to us, a world of possibilities and interesting tastes.

When you look at every cuisine in India, especially those from the coast, all of them involve a preparation using fish head. These preparations almost always use a pungent ingredient, mostly to mask the strong taste of the fish head. While all the preparations are delicious, the fish head still remain underappreciated.

Next time you cook, remember not to discard the fish head and make a different prepration than that of the fish itself, and savour the deliciousness of the fish head.
