Myosin - a protein found in fish muscle/ head, under favourable conditions during cooking,forms a gel network and creates an interesting texture in currys and sauces. These sauces are delicate and lush. Cooking with fish head has opened to us, a world of possibilities and interesting tastes.

When you look at every cuisine in India, especially those from the coast, all of them involve a preparation using fish head. These preparations almost always use a pungent ingredient, mostly to mask the strong taste of the fish head. While all the preparations are delicious, the fish head still remain underappreciated.

Next time you cook, remember not to discard the fish head and make a different prepration than that of the fish itself, and savour the deliciousness of the fish head.

Our hearts go out to all the farmers, vendors,suppliers and employees
who help make restaurants what they are.



These are tough times for the whole restaurant community.With all the uncertainty surrounding us, it is difficult to focus on the good.



As a small restaurant ourselves, we can imagine the ordeal other small restaurants are going through. We hope to get out of this as soon as possible.

When we planned to explore Goa and it's culture last December, .lipi knew exactly what we were looking for. We wanted to decipher the nuances that made Goan food our favorite since the day we had our first bite of Choriz.



What's a better place to start understanding those nuances than the local choriz vendors in Mapusa? We stumbled across Filu Moniz, who has been making choriz for years and told us how she wants people to keep coming back for her choriz. As she explained the whole process beginning from the butchering of the pig to the casing and smoking, the process didn't sound any less than a musical performance.



The tart potent punch of palm vinegar and the spicy vapours of the chilly were a complete assault on our senses. While had his taste buds on fire, we agreed that Filu Moniz's choriz made us go weak in the knees. An absolutely delightful experience.

The love for mustard in Bengali cooking is almost a romantic affair. One really needs to understand the nuances of cooking with this ingredient to really appreciate it. Heat mustard oil to few degrees more than it needs to be, it'll turn bitter. Heat it a few degrees lesser than required, it is supremely sharp. Grind mustard seeds finer than required, it ticks off the harmony of the dish.



A dash of mustard oil in jhal muri, hilsa or illish cooked in mustard and curd, or mustard paste in paturi. The medium of cooking and methods are varied but the love remains the same.



The love for mustard in Bengali cooking has led Varun to make this dish of Grilled mustard leaf, Chilli in Mustard oil and Magur.

The city of joy is filled with surprises. We stopped at a random street side joint and tried these kebabs. Insanely delicious and a reminder of how this city has something to satiate every soul.



From the taste of cardamom laced mutton rezala left behind by the royal chefs of the Mughal court to the canapes introduced by the British Raj and wonderfully baked goods at David Nahoum's Jewish bakery. Kolkata managed to preserve it's cultural integrity like no other.

The abundance of wild mountain vegetables during our trip to Uttarakhand was a sight to behold. We came across a wide variety of tubers, gourds, wild leafy vegetables, flowers, lentils and herbs. Any cook is truly spoilt for choice in Uttarakhand. •
lipi loves to cook with vegetables, and this dish speaks volumes about his eye to detail and an ever improving palate. •

Here, figleaf gourd is cooked in pine and nasturtium oil, served with sorrel and marigold. •
