Inspired by my memories at all the Irani bakeries in Bombay , Parsi colony canteens , and a dodgy bakery called Chickita near my school, our puff pastry pies are delightful!

Tart, sweet and utterly divine, our Raspberry & Frangipane Tarts have been a crowd favourite from the get go!

It is believed that the raspberry frangipane tart has a rich history that dates back to the 17th century.

The tart originated in France, where frangipane was a popular filling for pastries and cakes. The filling was typically made with almonds, sugar, and eggs. Raspberries were added to the frangipane filling, when the fruit became widely available in Europe.

The sweet-tart combination of raspberries and frangipane became a classic flavor combination and over time, this tart remains a beloved dessert in French patisseries and around the world.

VANILLA BEAN & CHOCOLATE PROFITEROLES

There are so many desserts that you can make with choux pastry. One of our favourites to bake are Profiteroles (pronounced pruh-FIHT-uh-rohl).

At Handmade, Assagao these bad boys are baked with a crisp streusal layer, and the end results are, hollow rounds of choux pastry that are filled with vanilla bean custard, once cooled. Dipped in 70% Belgian chocolate and sprinkled with cacao nibs, the combination of pastry, a crunchy chocolate layer and cold vanilla bean custard is delightful!

The word 'Profiteroles' is believed to be derived from 'profit', which means 'small gift' which seems like a fitting name for such a delicious dessert.

VANILLA BEAN CREME BRULEE

Our luscious Crème Brulee is made with a creamy custard base that's infused with the most beautiful vanilla beans that we source from Ooty and a caramel topping. The caramel forms a hard coating over the custard base, giving it an aesthetic facelift, and an extra crunch.
Typically, you would crack the caramel with a spoon to dig into a soft creamy dessert with a slightly dark flavor of burnt sugar. Its Chef 's favourite dessert and a has a permanent place on the dessert menu

CLASSIC BRIOCHE BUNS

Our brioche dough is fermented over night which ends up giving the finished bun a rounded taste, makes it super soft, fluffy and easier to digest.
It's glazed and then embelished with sesame seeds and makes a really good burger bun / sandwich bread.
