What is it about food that makes you yearn for times gone by? What is it about the way dishes are laid on the table that instantly transports you back into time? What is it about the way a particular dish smells that feels like echos from the past?

If only we knew when we were sitting on the floor with folded legs, eating with our hands, with eyes fixed on the television, and no clue how the food on the plate was getting replenished on its own, that we’d be making some incredibly powerful core memories, we’d have probably given our moms a big hug!

We think we can safely say that most of us have some very special memories of sitting on the floor and eating. Rushing home from school, throwing our bag in a corner just as mom would seat us on the floor and feed us with her hands from a steel thali - we don’t even know when she would wipe the thali clean but the sweet slumber afterwards was proof enough that we ate more than our fair share. Years later, even with a brand new dining table at home, grandma would prefer to sit on a floor cushion to have her meal and our father would join in.

The legacy of K. Rustoms is not unbeknowest to those of us in Mumbai. A thick slab of ice cream sandwiched between two wafers has become emblematic of weekends at Marine Drive. In the same breath, the almost homely feeling of eating malai kulfi at Parsi Dairy Farm is an emotion for who would spend countless evenings at the Mumbai institution during one of her first stints at Taj in Mumbai.

Combining these two core memories of many Mumbaikars is our Malai Kulfi Sandwich, made with hand churned full fat A2 quality milk, generously filled and sandwiched between two shortbread-style spiced biscuits.

The dessert on Bawri BKC menu is a true testament to Mumbai’s vibrant culinary history and Chef Amninder’s two decades long love story with this city.

The cocktail menu at Bawri BKC takes inspiration from some lesser known but regionally adored fruits. We constructed this menu to pay homage to India’s bountiful produce that differs greatly from region to region. For some of us, many of these fruits are almost mythical and what better way to introduce our patrons to these than through some ingredient forward cocktails. Featured here is Our Tenga made with a purée of Ou Tenga fruit from Assam, where hails from. Ou Tenga is widely used in Assamese cuisine, both raw and ripe. The Tenga fruit, also known as elephant apple, gives a distinct tanginess to Our Tenga, a whisky based cocktail. The drink also features dried apricots, ginger and honey, and smoky whisky.

There’s no close substitute to Ou Tenga - it strangely looks like a pomelo from the outside, is more astringent than limes and has a fibrous texture. Have we intrigued you enough?

From the ancient courts of Magadh in Bihar, comes Litti Chokha - a complete meal in a dish. There are various versions to its origins and history but the one we like the most is how this dish turned out to be valiant hero during the Great Mutiny of 1857 when the Indian soldiers relied on litti chokha’s simplicity as it could be baked without any special equipment even in the middle of the jungle in pits dug into the ground. And because the traditional recipe required such few ingredients, it would be A-Ok to eat even two-three days later. It’s fascinating to see how food that originated in once place traverses time and evolves to meet different needs.

Over the years, the most common way to enjoy litti in most Bihari (and Indian) households has become to eat it with choka, a mash made out of boiled potatoes, roasted eggplants, green chillies, garlic, mustard oil and spices. At Bawri BKC, this regional staple is cooked the conventional way in our tandoor and served with ’s chokha and a special tomato chutney.

Our open kitchen is the epicenter of our being at Bawri BKC. Our team of chefs helmed by work the sigris and the tandoors in a traditional fashion, coaxing the best flavours out of generational, heirloom recipes. From Bawri Goa to our newest piece of heart, Bawri BKC, the open kitchen with open fire appliances are a window into our soulful and honest cooking.

It is our constant endeavour to rebuild the narrative around ancient cooking techniques and encourage today’s generation see how ‘cool’ it is to slow cook the food we eat. At the same time, we love when our patrons peep inside and are reminded of their own kitchens in their ancestral homes where chulhas were the norm and cooking in the heat with a smile was a given.

There’s nothing more comforting than a mother’s love. A close second perhaps is ’s Sarson Da Saag at Bawri BKC. A true homage to her Punjabi roots, this dish is a limited edition seasonal specialty at our Mumbai outpost and will stir up all kinds of emotions within you. You’ll be reminded of yellow hued ‘sarson ke khet’ either from a trip to Punjab or from the movie Dilwale Dulhaniya Le Jayenge. You’ll be reminded of the aromas of mustard leaves embracing the spices wafting through the kitchen in those wintry months of your your childhood. You’ll suddenly become nostalgic of your grandmother’s wrinkly hands adding a dollop of makkhan on top.

Once a rural dish in the heartland of north India, over the decades it’s become symbolic of Punjab’s fertile land and fresh produce. We’re open!

Thank you for all the love you’ve showered us with this past week since we announced the launch of Bawri BKC. We took this past week to fine-tune our menus, huddle up with our kitchen team along with to go over every detail in our recipes, dedicated hours to our service staff training them about our dishes, their origins and stories, managed some heavy lifting to get every table, chair and work of art in its right place, and celebrated the milestone that led us to this day with some of you.

The samosa of our dreams. Have you ever had vivid dreams of how if two of your favorite foods were combined to make a whole new dish, it would be the most amazing thing to happen to mankind? For us, it would have to be the coming together of the quintessential Indian snack samosa and the symbol of Punjabi cuisine, butter chicken.

Inspired by ’s Punjabi heritage, this dish on our breakfast menu at Bawri Goa is any child or grown up’s dream come true. The flaky pastry dough of the samosa deep fried until it’s crispy holds within itself Bawri’s authentic butter chicken, a slow cooked rendition from Chef Amninder Sandhu’s personal # archives. These piping hot samosas are served with freshly hand-pounded chutney made on the silbatta, a process that gently coaxes out all the flavours out of the ingredients.

Time to shine light on the humble thecha, a hand-pounded chutney with origins from the homes of the Maharashtrian farmers who would carry this modest preparation to the fields with them as part of their shidori (breakfast baskets). What started off as a fuss-free staple made with as basic ingredients as green chillies and salt, today thecha has many renditions across Maharashtra. However, the ritual of thechna, which means pounding and lends the chutney its name is undeniably the make or break step of this recipe.

At Bawri, the thecha is hand pounded on a traditional silbatta, breaking down the chillies and aromatics slowly and allowing the flavours to bloom without the heat of a mixer-grinder.

These thecha potatoes alone are worthy of a reason to visit Bawri. ’s thecha is pounded with peanuts adding that salty, nutty undertones while the heat from Coorg green chilies makes you yearn for one more bite even as you while you simultaneously gasp for air. Care for a bite?
