There are dishes that announce themselves, all crimson bravado and turmeric swagger. And then there is Makhmali Safed Murgh. White. Quiet. Devastating! 😍✨

The name translates to velvet, but that barely captures what happens in this handi. Cashews ground until they forget they were ever solid. Cream coaxed, not boiled because violence breaks what patience perfects. Chicken surrendering to yogurt marinade over hours, becoming tender through time's gentle insistence.

At Urban Nawab Goa, we make our Makhmali Safed Murgh using our owner's family recipe, the kind that exists in muscle memory, not measuring cups. Where grandmother's "enough" meant something precise that took a lifetime to learn.

Watch how it coats the spoon. That's not cornstarch or artificial cream. That's ground cashews and reduction, technique and restraint. The ginger julienne isn't decoration, it's necessary counterpoint, cutting through richness with its sharp, clean bite.
