Ingredients
250g plain flour
50g cocoa powder
300g caster sugar
1/2 teaspoon bicarbonate of soda
2 teaspoons baking powder
1/4 teaspoon salt
300ml milk
1 egg
2 tablespoons vegetable oil
1 teaspoon vanilla essence
175g chocolate chips
75g chopped walnuts
50g whole almonds
4 tablespoons brown/demarara sugar

Directions
Preheat the oven to 180 C. Grease muffin tin or line with paper muffin liners.
In a medium bowl, sift together flour, cocoa, sugar, baking powder, bicarbonate of soda and salt. In a large bowl combine milk, egg, oil and vanilla. Mix dry ingredients to large bowl; mix well. Add chocolate chips and walnuts, stir well.
Fill muffin liners 3/4 full. Poke almonds into tops of unbaked muffins. Sprinkle muffins with demerara sugar. Bake for 20 to 25 minutes, or until a skewer inserted in centre comes out clean.

An easy that has drizzled on top for an added punch.

Ingredients
Coffee cake:
100g caster sugar
100g butter
2 eggs, beaten
2 tbsp instant coffee dissolved in 2 tbsp of water
100g self-raising flour
Syrup:
100ml water
1 tbsp coffee
4 tbsp sugar
Coffee sauce:
50g caster sugar
1 tbsp instant coffee
3 tbsp honey or chashni
50ml water
125ml evaporated milk

Direction
1. Preheat oven to 180 C. Grease a 9 in / 23cm cake tin.

2. Beat butter until light and fluffy with electric be**er. Add sugar and beat for another minute. Gradually add the beaten eggs, coffee water, alternating with the self-raising flour and beating until the mixture is smooth and light. Tip into the prepared cake tin.

3. Bake for 30 to 35 minutes, or until skewer inserted into centre comes out clean.

4. Place all the syrup ingredients in a pan and heat until the sugar has dissolved.

5. Prick holes all over the cake and spoon the coffee syrup over the cake while still warm.

6. For the coffee sauce: mix all the ingredients and heat until the sugar dissolves. Serve cake warm drizzled with warm coffee sauce.

125g butter, softened
125g caster sugar
4 eggs, separated
200g peeled and finely ground almonds

Directions
1. Break the chocolate into pieces in a bowl and set the bowl over simmering water to melt the chocolate, stirring occasionaly.

2. Cream the butter and sugar until light and fluffy. Separate the eggs, and add the yolks to the butter mixture together with the ground almonds and melted chocolate. Mix well to combine.

3. Whisk the egg whites until stiff and add to the batter, mixing gently.

4. Put the batter into a 20cm round tin, and bake in a preheated oven at 180 C / Gas 4 for about 20 minutes or until done.

5. Cool in the tin for about 15 minutes before inverting onto a plate. The addition of ground almonds sets this cake apart from others, and gives it a a rich and tender crumb. Serve warm with a dollop of cream for a truly luxurious pudding.

This is a , topping or decoration that has lots of uses. It can be whipped as filling or icing, or just poured over whatever you like.

Ingredients
9 ounces bittersweet chocolate, chopped
1 cup heavy cream
1 tablespoon dark rum (optional)

Directions
Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.
Allow the ganache to cool slightly before pouring over a cake. Start at the center of the cake and work outward. For a fluffy frosting or chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy.

Ingredients
1 cup chocolate cookie crumbs
3 tablespoons white sugar
1/4 cup butter, melted
1 (10 ounce) package frozen raspberries
2 tablespoons white sugar
2 teaspoons cornstarch
1/2 cup water
2 cups white chocolate chips
1/2 cup half-and-half cream
3 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
3 eggs
1 teaspoon vanilla extract

Directions
In a medium bowl, mix together cookie crumbs, 3 tablespoons sugar, and melted butter. Press mixture into the bottom of a 9 inch springform pan.
In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Bring to boil, and continue boiling 5 minutes, or until sauce is thick. Strain sauce through a mesh strainer to remove seeds.
Preheat oven to 325 degrees F (165 degrees C). In a metal bowl over a pan of simmering water, melt white chocolate chips with half-and-half, stirring occasionally until smooth.
In a large bowl, mix together cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate. Pour half of batter over crust. Spoon 3 tablespoons raspberry sauce over batter. Pour remaining cheesecake batter into pan, and again spoon 3 tablespoons raspberry sauce over the top. Swirl batter with the tip of a knife to create a marbled effect.
Bake for 55 to 60 minutes, or until filling is set. Cool, cover with plastic wrap, and refrigerate for 8 hours before removing from pan. Serve with remaining raspberry sauce.

This is so yummy. All moms if you want to impress your kids you can try it now.

Ingredients
175g softened butter
plus extra for greasing
175g golden caster sugar
3 egg
140g self-raising flour
85g ground almonds
½ tsp baking powder
100ml milk
4 tbsp cocoa powder
50g plain chocolate chip or chunks
few extra chunks white, plain and milk chocolate, for decorating

Directions
Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb/900g loaf tin with a long strip of baking parchment. To make the loaf cake batter, beat the butter and sugar with an electric whisk until light and fluffy. Beat in the eggs, flour, almonds, baking powder, milk and cocoa until smooth. Stir in the chocolate chips, then scrape into the tin. Bake for 45-50 mins until golden, risen and a skewer poked in the centre comes out clean.
Cool in the tin, then lift out onto a wire rack over some kitchen paper. Melt the extra chocolate chunks separately in pans over barely simmering water, or in bowls in the microwave, then use a spoon to drizzle each in turn over the cake. Leave to set before slicing
