A closer look at a few of our festive favourites - made with thoughtful ingredients, familiar flavours and a little Slow Bakes twist.

Rose Pistachio Bliss Balls
Grain-free and naturally sweetened with Medjool dates, these are made with pistachios, almonds, organic rose water and cardamom.

Ladookie
A gluten-free treat inspired by the beloved besan ladoo, but baked into a cookie — with desi cow ghee, coconut sugar and a light crunch of amaranth.

Caramelised Jaggery Makhana
Pesticide-free makhana roasted in desi cow ghee, then caramelised with organic jaggery and finished with a hint of cardamom.

Baked Sourdough Mathri — two ways

Low-Gluten Multigrain
Khapli wheat, jowar, amaranth and almond flour, seasoned with cracked pepper and ajwain, then slowly fermented with our sourdough culture for a lighter, more flavourful mathri.

Gluten-Free Multigrain
A blend of rice, oat, amaranth and almond flour, seasoned with organic Kashmiri chilli and kasuri methi, then slowly fermented with our gluten-free sourdough culture.

Made in small batches, because the little things matter.

And then, there was the table.

For our Raksha Bandhan Festive Edit, the menu took inspiration from the Spice Route - bringing together flavours, ingredients and breads shaped by the journeys of trade, migration and exchange.

There was our sourdough Khapli wheat flatbread, inspired by the Barbari; our take on börek, made with delicate sourdough puff pastry; and a festive Malpua made with rice flour and Khapli wheat, dipped in a light coconut sugar and honey syrup and finished with saffron honey.

Alongside came fresh artisanal cheese , seasonal produce, small-batch relishes, handcrafted accompaniments, coffee and infused honey- served across the beautiful Nicobar pieces that brought the table together.

A menu created to be explored slowly, shared generously and enjoyed around the table.

Our space. A new expression. Woven with the world of Nicobar.

Rajiv brought elements from the world of Nicobar into our space, layering them with greens, flowers and dried botanicals gathered from Sonal’s garden, our café bungalow and plants shared by members of our community.

What was already around us was reimagined alongside Nicobar’s distinctive pieces, creating a space that still felt unmistakably Slow Bakes, while carrying a new visual language.

A meeting of two worlds, woven together for our Raksha Bandhan Festive Edit.

A hamper is more than what’s inside. It’s an invitation to gather, celebrate and create memories together.

Created especially for our Raksha Bandhan Festive Edit with Nicobar Ahmedabad, we’ve thoughtfully curated a collection of eight Rakhi hampers, pairing Slow Bakes’ handcrafted festive pantry with carefully selected Nicobar pieces.

From small-batch relishes and preserves to handcrafted festive treats, every hamper has been designed to celebrate thoughtful gifting and the joy of sharing around the table.

Join us this Sunday as we unveil the complete collection for the very first time.

Spend the afternoon with Rajiv Purohit, Co-Creative Director at Nicobar, as he shares the art of festive tablescaping, enjoy a specially curated festive menu by Slow Bakes, experience the hamper collection, and be among the first to pre-order your favourites.

As a little reminder of the afternoon, each guest will also take home a thoughtfully curated keepsake from Slow Bakes and Nicobar Ahmedabad.

Not all granolas begin the same way. Ours begins with time.

Before our granola ever reaches the oven, rolled oats spend the night soaking in our gluten-free sourdough starter. It’s a slower process that naturally helps reduce phytates while developing flavour and making the oats easier to digest.

From there, we fold in cold-pressed virgin coconut oil, just a touch of coconut sugar, and soaked nuts & seeds before slowly baking every batch until perfectly crisp.

Only then does each granola take on its own personality.

Dark Chocolate & Cranberries — finished with dark chocolate chips and cranberries for a balance of rich cocoa and gentle sweetness.

Cacao Nibs & Goji Berries — finished with cacao nibs and goji berries for a deeper chocolate flavour and a naturally vibrant finish.

Every batch is made slowly, in small quantities, because we believe the best food is worth waiting for.

Which one would find a place in your breakfast bowl?

Where every batch begins —

Rolled oats, soaked overnight in our gluten-free sourdough starter
Cold-pressed virgin coconut oil
Soaked almonds & mixed seeds
A touch of coconut sugar
A punch of Ceylon cinnamon

Slowly baked.

Finished with

Dark chocolate chips — Rich cocoa notes with little pockets of indulgence.

Cranberries - A gentle tartness that brightens every bite.

The same slow foundation.

A different personality.

Deep cocoa notes from cacao nibs.

A gentle burst of sweetness from goji berries.

Small batch.
Slow fermented.
Made with intention.

The finishing touches…

Every batch begins the same way.

The personality comes at the end.

Cacao nibs - Deep cocoa flavour with a satisfying crunch.

Goji berries - Naturally sweet, rich in antioxidants and a source of vitamin C.

Simple ingredients.
Thoughtfully chosen.
Slowly made.

Every loaf begins with an idea. Some become signatures.

These three have been with Slow Bakes almost from the very beginning.

Made with 80% wholegrains, naturally leavened with sourdough and slow-fermented, they weren’t created to follow trends or fill a menu. They grew out of places Sonal has called home, travels that sparked new flavour combinations, and a curiosity to discover what sourdough could become beyond a plain country loaf.

Swipe through the stories behind these signature loaves.

A Tale of Two Homes

Achari with Feta

This loaf carries two homes in every slice.

Paanch phoren and mustard oil from Kolkata, where Sonal lived for over a decade. Methiya masala from Gujarat, where she was raised and eventually returned to build Slow Bakes.

Finished with artisanal feta, it became one of our earliest flavour experiments - and one that has quietly remained a favourite ever since.

Nourishment, in a Loaf

Seeded Multigrain

Not every signature loaf is bold. Some quietly become part of everyday life.

Whole grains, an abundance of seeds, and tricolour quinoa come together to create a loaf that’s hearty, wholesome, and deeply satisfying.

Proof that the simplest rituals are often the ones we return to the most.

80% Wholegrains • Naturally Leavened • Slow-Fermented

Inspired by Distant Tables

Olive & Herbs

Some journeys leave behind memories. Others become recipes.

Inspired by Sonal’s travels and a love for Mediterranean flavours, this loaf brings together Kalamata olives, green olives, and organic herbs & spices, folded into our slow-fermented sourdough.

A little reminder that travel has a way of lingering long after the journey ends.
