So, you have heard the mouth-watering research reports that predict infinite growth in cloud / dark kitchens across the world over next few years. Believing these rosy claims, you are now convinced that this is the future and have worked out / are working your current business around this buzz word. If yes, then STOP!! Have you given it a hard and sensible thought? In dark kitchen, how do you convince your customers that yours is a superior quality output? For example, can you really tell which product is better just by looking at photoshopped photos of “A-One Biryani” vs “Super Star Biryani”? (Probability is; they have used same photos and your actual dish doesn’t even remotely appear similar to these mouth-watering photos). The dish photographs don’t tell you whether it is made in a smelly garage or a swanky commercial kitchen? Whether trained chefs were involved or made by a self-proclaimed cook? Whether the raw materials used were even edible grade? You have no idea, but to believe in a social media or app photo to believe in the dish and part with your hard-earned money. Can this be your Business Model? How can this be a success Mantra, when you just can’t differentiate between boys and men.
That’s the reason Cloud only Brands (Who don’t have their brick and mortar presence) struggle to survive in online food ordering. Brands, who just rely on Aggregators (Swiggy / Zomato etc) for online orders also struggle to make a meaningful net margin. There are multiple cloud kitchens (we interviewed some of them in 5 metro cities) who post monthly turnover of Rs. 2 crores+ and net profit of Less than Rs.50,000.
Do you want this business which has net margin of less than 0.25%? Think again!!
Why?? Because, they didn’t commit adequate resources and efforts in developing the brand itself. A Brand is much more than a great looking photo. Its more than some fancy words used to describe your dish. It can’t be achieved just by having fancy packaging. You need to invest in basic differentiating factors which makes your brand unique. Just like any other industry, developing your brand is the only way to remain successful in the long term. That’s why players having hybrid (online + offline) presence are more successful than pure play online players. Sooner you realize this, faster it will benefit your business.
How to develop a successful brand. Well, that’s a different subject altogether.

Welcome, for having an ambitious goal. You think you will have excellent returns from a business where more than 3/4th of new entrants fails. That too, within first year of operation. They either close the shutters or try to do a distress sale. That is food industry for you. If you are not careful.
You think making a great menu and marketing with copied stock food photos will give you success in food industry? Well, that’s what most of the new players think. They think its an easy business. Your every endeavour would be an adventure of life-time and leave you wiser and more prudent (and maybe a multi-millionaire). If you know all these aspects of business, do it on your own.
