Moriya Kheer

½ bowl moraiyo
4 tb sp ghee
1 ltr milk
¾ bowl sugar
7-8 saffron strands
¼ tsp cardamom powder
4-5 finely chopped almond
Method:
Take a pan heat ghee. Add moraiyo and saute it. While sauteing you will find that moraiyo turned into little white color. Simultaneously keep milk on the gas and let it boil. Then add hot milk and add saffron. Keep cooking it till moraiyo gets cooked. Then add sugar and let boiling it. Once it gets thicken put off the gas. Now take it in a serving bowl and sprinkle cardamom powder and almond. One can refrigerate it and serve cool also. It tastes so yummy.

Farali Khnadvi
Ingredients:
1 bowl shingada flour
1 bowl water
1 bowl buttermilk (mixture of curd and water)
1 Tbsp ginger-green chili paste
1 tb sp lemon juice
Salt to taste
For garnishing:
4 Tbsp oil
1 Tbsp cumin seeds
1 Tbsp sesame seed
1-2 green chilli
Coriander leaves and Grated coconut
Method:
Take a shingada flour in a deep vessel. Add all ingredients with water and make a batter. Then put it on the gas. Stir continuously to avoid lumps. Keep cooking it till it becomes smooth thick batter. Now try to spread little mixture on the greased inverted plate, if it is rolling perfectly then put off the gas. [Meanwhile apply oil on the reverse side of plate and keep plates ready; one can spread on marble platform as well] Now quickly start applying hot batter on the plate. Try to spread thin and even layer. Let it cool. Now cut it in vertical stripes two inches wide and roll it. Do the same for other plates also.
Heat oil and add cumin seed, sesame seed and slit green chili. Once they start crackling off the gas and pour hot oil on khandvi rolls. Sprinkle grated coconut and fresh coriander leaves [One can sprinkle red chili powder also]. Your delicious farali khandvi is ready to serve.

Sabudana Khichdi Recipe (With little twist)
Ingredients:
1 bowl Fivestar Sabudana (Sago)
1 bowl chopped cucumber/ green papaya
¼ bowl roasted semi-crushed peanuts
4 Tbsp Sugar
1 Tbsp Lemon juice
2 Tbsp Ginger-green chili paste
3 Tbsp oil
1 Tsp Cumin seed
3-4 Curry leaves
Sindhav (Farali Salt) as per taste
For garnishing: few springs of finely chopped coriander leaves
Pomegranate seeds (optional)

Method:
Wash sabudana and soak it in immerse water for 3-4 hours (soaking is very important step when you are using sabudana (sago) in your dish because it should be separated and keep moisture as well). Roast peanuts on hot pan, peel off the skin then crush it.
Take a pan, put it on heat and pour oil. Once oil gets heat add cumin seeds. When cumin seed started crackling add curry leaves. Then add chopped cucumber or papaya. Cook till it is done, add ginger- green chili paste and sauté for a while. Add sabudana and rest other ingredients into it. Mix well and be assured that it won’t get stick on the bottom. Turn off your gas, your Sabudana khichdi is ready to serve. If you find it dry than sprinkle little water if required.For serving take out in to the serving bowl, garnish it with a fresh coriander leaves and pomegranate seeds. Your delicious Sabudana Khichdi is ready serve hot.
