Brookes SuperValu Youghal SuperValu has served the people of Ireland for over 30 years and has become a well established landmark across Irish communities.

In 1888, John Brookes started training in the grocery business in Youghal at the ripe old age of twelve. In 1907, he became a partner in Youghal’s leading grocery wholesaler and retailer Pasley & Co. Ltd and in 1922, he became the owner of the business. Under his stewardship, the business prospered and he handed the business on to his son Jack in 1950. Jack ran the business from then until he hand

ed the business over to his son Ken in 1982. Pasley’s became one of the first self service supermarkets in the country in 1962 when they joined VG - a precusor for SuperValu. Pasley’s became one of the first SuperValu Stores in Ireland in 1983. In 2003, Pasley’s SuperValu moved to it’s present location at 143 North Main Street and changed it’s trading name to Brookes SuperValu. Ken’s son Peter, joined the business in 2010 and will take over from Ken when he retires. Our core values remain the same today as they did way back in 1888 and they are :

Ingredients:
3 Cubes of Ice
50ml Tequila Blanco
25ml Fresh Lime Juice
25ml Cointreau Orange Liqueur
10ml to 15ml Agave Syrup
2 to 3 Fresh Jalapeños, Sliced
1 Wedge of Lime, to Garnish
Tajin or Chilli Salt (3 teaspoons of Maldon Salt with ½ teaspoon of Chilli Powder)

Method:
Rim the glass with a wedge of lime and dip into Chilli Salt or Tajin.
Squash the jalapeños in the bottom of a shaker.
Add the tequila, lime juice, orange liqueur, agave syrup, and ice to the shaker.
Shake well and strain into the prepared glass.
Garnish with an extra slice of jalapeño and a wedge of lime.

Taste the summer, one slice at a time with delicious Summer Strawberry Tart. 🍓

Ingredients:
Tart Shell
125g Unsalted SuperValu butter, softened
85g Icing sugar
1 Egg
200g Plain SuperValu flour, plus extra for dusting
Filling
100g Strawberry jam
500g SuperValu Signature Tastes Zara strawberries, hulled and quartered
2 tbsp Apricot jam
Crème Pâtissière
300ml Milk
150ml Double cream
1 tsp Vanilla extract
3 Egg yolks
60g SuperValu caster sugar
3 tbsp Cornflour
50g Butter, cubed and softened

Method:
Pastry: Cream butter and sugar. Mix in egg, then flour. Form dough, wrap, and chill for 30 minutes.
Shell: Roll pastry to a 26cm circle. Line a 23cm tart tin. Prick the base. Chill for 30 minutes.
Blind Bake: Preheat oven to 180°C. Line pastry with parchment and baking beans. Bake for 15 minutes. Remove parchment and beans. Bake for 12-15 minutes, until golden. Cool in tin.
Crème Pâtissière: Simmer milk, cream, and vanilla. Whisk yolks and sugar. Stir in cornflour. Pour hot cream over egg mixture, whisking. Return to the pan. Cook until thick. Cool, whisking occasionally. Whisk in butter until smooth and chill.
Assemble: Spread strawberry jam on tart base. Pipe crème pâtissière over jam. Arrange strawberries on top.
Glaze: Heat apricot jam with 1 tbsp water. Brush over strawberries.
