It’s a pie kind of day! Deviating away from Indian food…BUT the star of the show is not the pie, it’s the POTATOES! why? We’ll its simple, they are steamed, crushed, coated in cream and finished off in the oven. BUT, generously sprinkled with fresh Parmesan, shake of onion granules and chive just before serving and put back in the oven for a couple of minutes to finish browning, giving it a light crispy edge! That’s why the potatoes are the star of the show!
