If ever there was a company that needed a good set of knives, it’s The Hunter and The Chef! 🔪🦌
From cooking in the kitchen to working out in the field, a good blade is essential to what we do. And between the two of us, we certainly give them enough hardship!
Great to have the lads from HeinzKnives hunting with us here in Kerry this week.
They’ve kindly brought along a chef’s knife and a hunting knife for us to put through their paces. Two very different jobs, but both will be getting plenty of use!
A big thanks to the Heinz Knives team for the generous gesture. Looking forward to seeing how they perform both in the field and back in the kitchen.

The hole is dug. The Fulacht Fiadh is taking shape. And we’re beginning to question some of our life choices. 😂
Between now and Saturday there’s still a deer to hunt, drag home and butcher, stones to gather, fires to build and a fairly ambitious attempt at Bronze Age cooking to pull off.
Thankfully, your part is much easier.
Book a ticket. Turn up Saturday evening. Eat the stew. 🔥🦌
We’ll be cooking venison in the Fulacht Fiadh using fire, hot stones, herbs and a big hole in the ground.
What could possibly go wrong? 😂

Chase, Ash & Rufus putting the new Dogtra Compass through its paces.

Three dogs stretching their legs across the open ground — a perfect chance to put the new setup to work.

Great piece of equipment and it certainly won’t be getting an easy life with us. This is going to get properly worked over the coming season.

Looking forward to seeing what the Compass can do when the woodcock season gets underway.

A DEER IN A DAY 🦌🔥
We’re going back to the Bronze Age for this one…
On Saturday 3rd October we’re heading to Dromid, where we’ll be firing up a Fulacht Fiadh at the Inny Tavern and cooking venison using one of Ireland’s oldest cooking methods — an earthen pit, water and stones heated red-hot in the fire.
We’ll start at 9am with the fire, a deer butchery demonstration and preparation of the venison before it goes into the Fulacht Fiadh for a long, slow cook.
There’s plenty happening throughout the day too, including a woodland walk at Tulligealane and an afternoon panel discussion on deer, hunting and wild herbivore management in Ireland.
It’s a chance to have an open conversation about our growing deer populations — hearing from hunters, farmers and others dealing with the realities on the ground, and looking at what responsible deer management actually means.
And if deer need to be managed, we also need to talk about what happens afterwards.
Venison is one of the finest wild meats we have in Ireland, and we want to get more people cooking it, eating it and appreciating it.
So after a full day of discussion, demonstration and cooking, we’ll sit down at 6pm to eat the venison that has been at the centre of the day.
On the menu:
Inny Valley slow-braised venison & porter stew
Seasonal root vegetables & champ mash
Bread & butter pudding
🎟️ Dinner tickets are €16, with proceeds donated to Nepal Flood Relief.
Tickets are available through the link in our bio.
From the deer on the hill to the food on our plate — there’s a much bigger conversation to be had.

Sion’s happy.

A serious flush of ceps coming through at the minute.

Joe & Sion out gathering some of the finest wild produce of the season. There are worse ways to spend an afternoon.

These beauties will be making their way onto the menu at some of our upcoming events — assuming we stop finding excuses to cook a few for ourselves.

Wild, seasonal, picked by us… and absolutely no chance we’re dropping a pin.

You bring your 5-year-old chanterelle hunting and accidentally enter her into an endurance event.

Rough forestry, fallen trees, boggy ground and legs about a quarter the length of mine…

But she made it through and came bearing chanterelles 😂🍄

Building character. One mushroom at a time.

Season prep is well underway.

A big thank you to Michael for the continued support and for keeping us supplied with am******on for the season ahead. It’s hugely appreciated.

Plenty of days in the Kerry hills coming up over the next few months, and hopefully plenty more moments worthy of that “Fueled by Hornady” sticker.

Thanks again to the team at Hornady for the continued support.
