Irish Boxty — with a little twist!
Boxty is a traditional Irish potato pancake, deeply rooted in the food culture of Ireland, especially in the north and west of the country. Made with grated and mashed potatoes, flour and buttermilk, it’s simple, comforting and wonderfully crispy on the outside.
What makes boxty especially interesting is that it has cousins all around the world! Many countries have their own version of a potato pancake — from Swiss rösti, to Polish placki ziemniaczane, to German Kartoffelpuffer. Different names, different traditions, but the same delicious idea: turn humble potatoes into something golden and irresistible.
For our version, we’ve added a little twist: courgette.
It brings extra freshness and colour while keeping that lovely crispy, comforting character of a traditional potato pancake.
Irish tradition meets a little modern creativity because good food is always evolving!
