Team Ireland 🇮🇪 It’s official, we’re off to Australia for the next WBC!
It may not be until 2028 but the planning has already begun and we are looking for interested butchers who are willing to put in the hard Sunday trainings and who can bring new ideas to the table as the standards in every WBC competition are getting better and more exciting between all the countries with each event-so if your interested in getting involved send us an email to [email protected]

Our James Whelan Butchers and Fresh Food Creators are surrounded by the finest meats crafted by artisans. We asked Gavin, our Shop Manager to share some of his personal favourites: "It’s like asking me to pick my favourite child! Our Chicken Parmigiana Sharing Plates are a family winner, so tasty and convenient – real comfort food. But it's hard to beat a Salt-Aged Ribeye Steak served with Beef Dripping Chips, mushrooms, and homemade chimichurri."

Free-Range, Ibérico Pork

Spanish, Artisan Producer, Redondo Iglesias, and Master Butcher and Food Hero, Pat Whelan, have come together to create this free-range, Ibérico. It’s sourced from Pata Negra pigs that roam freely in Spanish oak forests. Their diet of acorns delivers a naturally sweet pork with rich marbling which gives an incredibly luxurious flavour and tenderness. Here’s what the Great Taste Star Award judges had to say:

"A very delicious crackling with good clean fat. The pork is very simple and pure - there is a good tenderness to the lean meat".
