This is the cake I made for my little man's 5th Birthday earlier this month.

He has become a huge Pokemon fan and after changing his mind several times he finally decided he wanted a cake with his favourite character, Charmander.

It was all very last minute and, with some help from a friend making the internal structure to make him stand on his own feet, I finally got started on making it at 6pm on the evening before his birthday party, working through the night to finish it at about 430am!

Standing almost two feet tall, it is made from chocolate biscuit, sculpted into shape and then the shavings were used to pad out the legs and hips before using RKT for the head and arms.

The cake was then airbrushed and a handmade name using the Pokemon font was added to the board to finish it.

I was asked to make this cake recently by Sharon, who ordered it as a surprise for her husband Eric after he was promoted to the rank of Sergeant Major in the Irish Army, based at the Curragh Camp.

The cap is modelled on his own one, while the handlebar moustache is like the one he keeps threatening to grow out!

The Irish Defence Forces badge on the cap was hand made using a silicon mould from an original badge and then hand painted and dusted to give it that realistic effect.

The entire cake was Oxford Lunch, Eric's favourite cake and it rested on an Irish flag.

This is the cake I made for my daughter Alyx's 14th birthday last month.

It's two tiers of Bailey's Chocolate Biscuit, covered and airbrushed with her favourite colours and then finished with handmade flowers and feathers.

The fabulous cake topper was made by Amy Cakes.

I made this fabulous cake recently for Dave and Andrea's wedding at Virginia Park Lodge.

Standing almost four feet tall, it was four tiers of Baileys Chocolate Biscuit, Mint Chocolate Biscuit and Jaffa Orange Chocolate Biscuit and finished off with elegant handmade ruffles and flowers.

I had a little assistance on this one from the amazing Emilys Cakes who covered the cake and helped with the flowers.

One of my favourite cakes I did this time last year

I was delighted to make this cake for my friend Gail from Gails Rails.

Fashion is obviously a big part of Gail's life so this was the perfect cake for her and the colours were appropriate for her big black tie birthday bash!

I'd love to take credit for the design, but unfortunately I can't take all of it - the design is my take on the original by Always with Cake.

It is three layers of Chocolate biscuit. The top and bottom layers have the black and white nautical stripes pattern made famous by Coco Chanel.

On the middle tier I made my first ever attempt at damasking, and while I was very nervous about it, it turns out there's nothing to it!! The middle tier was then finished off with the iconic Chanel No 5 logo, with a twist.

Finishing touches on the cake are a handmade bow, handmade flower and a set of handmade pearls.

I'm really delighted with how this one turned out.
