Chorizo, red pepper and blue cheese BANGER

Recipe
Enough farfalle pasta for 4 portions
2 roasted red peppers skin and seeds removed and sliced
1 onion sliced
2 cloves of garlic sliced
Seasoning
1tsp dried thyme
1/2 glass of white wine
4 sticks of chorizo sausage the soft type ( I used James Whelan)
3 tbsp Tom paste
1 tub of full fat creme fraiche
A good few lumps of soft blue cheese
Parmesan a lot
Chives to garnish

Method:

Begins by heating a glug of oil in your pan, lash in the onions, garlic and dried thyme - season Nd sweat until soft add a splash of water if needed

Get you pasta ON

Pour the wine into the onions let it SIMMADOWN

In with the chorizo, simmer that for a bit

Then mix in the soft roasted peppers along with any of their roasting juices

Then in with Tom paste - stir to combine simmer on low heat

Now stir in the C fraiiiiche - simmer taste and adjust to the way you FANCY

Pasta should be ready so lash it into the sauce along with a little splash of pasta water - simmer then add in most of your BLUE and some Parmesan

Stir about

Then into your heated bowl, top with MORE CHEESE and some chopped fresh chives šŸ˜

And I’m telling you one thing this SUNDAG that’s a sauce worth making - even for rice of just on it own

Salmon and cream cheese roll ups
Demo in my highlights
1 sheet of puff
1/2 tub or more of FULLFAT Philly
1/2 tsp lemon zest
Good squeeze of lemon juice
A few twists of black pepper
Squire of honey
1 tbsp chopped chives
Pinch of cayenne pepper
2 handful of grated mozzarella optional
300/350 g smoked salmon
Egg wash

Mix the phillly with the chives, lemon juice, zest , cayenne, honey and black pepper

Lay the sheet of puff out

Spread the cream cheese mix all over it followed by the grated mozzarella the layer YO salmon

Roll it up… egg wash it

Slice it

Bake it at 190 25/30 mins

I needed to make loads so I did
6 egg white pinch of salt - beaten until foamy then added in 350 caster sugar tbsp at a time - splash of vanilla

For the red ones I added a drip of red food colouring into the piping bag

I used a small nozzle and did tiny presses

Oven 120 for about 35 mins I think šŸ¤”

Baked gnocchi is a mozzarella & ā€œbollik nakedā€ ragu

It’s saved to my highlights so it is šŸ˜

Ingredients
8 smoked rashers
Enough mince for 5 ppl
2 red onions sliced
1/2 head garlic
2 carrots diced
1 dessert spoon dried thyme-or oregano
1 leek sliced
big bunch of fresh herbs- sage, thyme and Rosemary finely chopped
1 huge glass of rich red wine
1 jar of passata
1 tin of toms
1l of chicken stock
Salt, sugar and pepper
Lots of Parmesan including the heel
2 balls of mozzarella
2 bags of gnocchi

Get a massive pot

Heat a small glug of oil and brown off the bacon

In a separate pan your going to brown the mince until crispy brown so this in batches

Remove the browned bacon - turn down heat add all veg, herbs and lots of seasoning- cover and sweat - 8 mins

Crank up your that pour in the wine, let is simmer the chase it with chicken stock followed by pasatta, ( simmer between each stage)tin of toms, dried thyme-and more seasoning plus a spoon of sugar - simmer for about 30 mins

After the time taste and adjust

Then add in the bacon, mince and Parmesan heel COVER

Transfer to a low oven for 2 or 3 hours

Preheat your oven to 180

Take out the sauce stir in the gnocchi ( can cook them before if your short on time )

Start to ladle the mix into a casserole dish
Tear up the mozzarella scatter it around
Top with Parmesan bake for 40
Mins
Top with fresh basil and a drizzle of oil

That’s a fine fine dinner

Barker’s browned BANGER coddle

Method and talk through in my highlights

Ingredients
6/8 jumbo sausages brushed lightly w oil
2 large onions sliced
4 garlic cloves sliced
3 carrots chunked
4/5 potatoes peeled and chunked
1 tbsp fresh rosemary and thyme
1 tsp dried thyme
2 bay leaves
1/2 glass of white wine

Sauce part
60g butter
1 tbsp wholegrain mustard
1 tsp Of dried thyme
60g flour
Lots black pepper and pinch of salt

1.5/2l chicken stock
Lots fresh parsley

Method
Begin by browning the sausages

Remove and lay them in a large casserole dish

In the same pan add a splash of oil - lower the heat and lash in all the veg, season well sprinkle in the herbs and SWEAT SWEAT SWEAT until soft - add in about 100ml of the chicken stock to aid the sweating

When they are fairly soft pour in the wine, keep heat low and cook for another while

In a separate pan -
Melt YO butter add in the mustard, thyme and lightly season

When butter foams SHOOT in the flour stir with wooden spoon on low heat for a while, let it get a bit Nutty ( watch my highlight and you will get the nutty)

Whisk in the stock - let it thicken

While it’s ā€œthickeningā€ stir in the sweated veg and any liquid left in that pan
Taste season etc

Stir in a load of fresh parsley

Finally ladle the saucy veg on top of browned BANGERS

Bake in medium oven 170 ish for about 1 hour and 1/2 or Lower for longer

This is HARDCORE deliciousness and if your really hunger lather some Kerrygold on some fresh Brennan’s and pour yourself a glass of milk and ladle a good few spoons of the above ina bowl 🄳

Pasta W smoked salmon, cream cheese and chives

Method step by step in my highlights

Ingredients
Any pasta
K**b of butter + splash of oil
Salt and white pepper
2 leeks sliced
2 cloves of garlic sliced
2tbsp brandy or white wine
3 tbsp finely chopped chives
3 tbsp cream cheese
Pasta water
6 slices of smoked salmon sliced
3 tbsp grated Parmesan

Method

Get the pasta on

In a large pan heat the butter and oil when it foams add leek, garlic and seasoning- sweat until softish

Pour in the brandy or wine - stir a bit

Scatter in most of the chives - simmer for a sec

Add the cream cheese ladle in some pasta water - until it gets
SAUCY (1 or 2 ladles should do )

In with the smoked salmon followed by the cheese simmer some more SEASON AGAIN may or may not want to add a splash more pasta water

Stir in your cooked pasta

Garnish with more Parmesan and the rest of the chives

Sausage casserole recipe

8/12 butchers sausages
1 tbsp of each of the following fresh herbs chopped- thyme, parsley and sage and or rosemary
K**b of butter + splash of oil
2 leeks washed and sliced
2 garlic cloves sliced
1 glass white wine
1 tbsp porcinis soaked in water
1 punnet of brown mushrooms sliced
4 šŸ„” peeled and quartered

60g butter
60g flour
Pinch of nutmeg
1 dessert spoon whole grain mustard
Salt and white pepper
Bay leaf
1.5l chicken stock

Method

Begin by browning your sausages- remove from pan a put into a casserole dish

In the same pan heat the butter and oil
When it foams stir in fresh herbs followed by leeks and garlic - SEASON

Simmer of low for a few mins before adding wine and porcinis - simmer again

Now in with the sliced mushrooms plus more seasoning let them sweat down before adding the potatoes - cook on low until sauce is ready

In a separate pan begin the sauce -
Melt the butter add the nutmeg, bay leaf, seasoning and mustard

Sit in flour - cook it out for a bit then whisk in your hot stock
Stir until no lumps then add in the mushrooms & spud part - simmer together for a while before pouring it over the sausages ….
bake in medium oven for 2 hours serve with bread and garnish with fresh parsley

Sticky aubergine soba

Recipe

1 aubergine cut in cubes
2 garlic cloves sliced
Dash of sesame oil
1 tbsp cornflour mixed with water
Bunch of scallions chopped
Sesame seeds
Some soba noodles
Tahini

Marinade

6 tbsp light soy
3 tbsp shAoxing wine
1 tbsp mirin
2 tbsp rice wine vinegar
1 tbsp brown sugar
1/2 tbsp garlic paste
1/2 tbsp ginger paste

Method:

Begin by combining all marinade ingredients

Cut aubergine in chunks and mix into marinade- leave for 4 or more hours make sure aubergine are coated in marinade

Heat a griddle pan or normal pan - cook off the aubergine until they are soft and well charred

Cook off the soba noodles - toss them in some sesame oil

In a separate pan heat some sesame oil - sautƩ the garlic add the remaining marinade followed by the cornflour slurry - simmer on low for a few mins

Add in the cooked aubergine

Get a hot bowl

Top with scallions
Garnish with sesame seeds and some basil and a drizzle of light tahini

Red pepper and pancetta pasta with a kick of scamorza and Gorgonzola

Recipe :
3 red pepper seasoned and tossed in olive oil
2 garlic cloves
Big bunch of basil
Enough oil to create pesto consistency
Salt and pepper

6 / 8 slices of pancetta chopped
1/2 clove garlic
Small k**b of garlic
Few lumps of smoked scamorza
Few lumps of Gorgonzola
Bail to garnish

Method
Begin by roasting the peppers until the skin is slightly black and they are really soft - remove the seeds

In a food processor blitz the peppers, garlic, basil, salt and pepper then add your oil until you reach runny pesto consistency

Rub the half garlic clove around a pan add a small k**b of butter and brown the pancetta, then remove and set aside

Get your pasta on

In the same pan as used for pancetta, pour in the red pepper sauce

Add a splash of pasta water followed by the cheese

Lash in the cooked pasta SWIRL around, add back in the pancetta top with a bit of soft left over Gorgonzola garnish with basil AND EAT FROM PAN
