Inspired by my latest trip to Marseille, today we have made some Petits Farcis De Poissons, 6 different vegetables (Tomato, Mushroom, New Potato, Pepper, Onion and Courgette) filled with a delicate fish mousse made of Achill Island Smoked Salmon, Smoked Mackerel and Fresh Haddock served with a tomato coulis and a side of our delicious Hollandaise Sauce.
