Well folks, we are going underground while everyone is getting back to normal after the summer and I would like to thank you all for making it such a great summer. I want to thank those who came from near and far and of course my amazing staff!

I’m closing for a few days to get some time off for the staff and I’ll be in the background working on some amazing new dishes that I’m going to add to the menu. Think comfort, autumn and a few more fantastic Donegal food producers will be gracing the pages of my menu!

Excited to share it with you when we return on the 10th of September. Thank you all so much for your support and encouragement and of course the craic!

What can I say about yesterday… other than it was fantastic. Thank you to the for having down. The audience were amazing and we also had a few spot prizes thanks to my wonderful local producers. It was great to show some of the incredible talented producers we have here in Donegal in my cooking and this is also reflected in my restaurant. I pride myself in using as much locally sourced ingredients in my restaurant as I can. These were just a few of them yesterday.

Thank you for having me. I was delighted to be doing a cooking demo at The Mary From Dungloe Festival Food and Drink Fayre. I made a No.9 salad with steaks from my good friends from Bluestack Farms and of course I used local ingredients from Donegal Sea Salt Filligans of Donegal DRO_ Donegal Rapeseed Oil Shy By Nature Farm The Milk Bar McLoone's Honey
