Exactly a year ago, our hearts were bursting with excitement. By now, we were on our last day at work, followed by our leaving party at the pub where Jim and I first met in the UK.

We were thrilled, but also very aware that we were leaving our comfort zone and stepping into the unknown. Insieme.

Hospitality can be a fast paced environment, where things change so quickly, but it can also build a solid routine, where habits become part of your everyday life.

I'm grateful to have had the opportunity to explore the world doing what I love, and to be able to choose where I am and what I'm doing every single day.

Every workplace holds a special memory for me from over 13 years of travelling. Today, I want to celebrate life and raise a glass to all the opportunities and experiences we've been lucky enough to have, all of them becoming part of the stories we get to tell.

Grab a taste of Italy by the glass 🇮🇹
100%PECORINO dry white.
Pecorino is a white grape native to Abruzzo.
The name comes from pecora (sheep), because sheep used to eat the grapes.

Expect:

• Nose: bright and aromatic — white peach, pear, lemon peel, mango, plus floral notes and a little sage / aromatic herbs
• Palate: full but fresh, good acidity, mineral, citrus + tropical fruit, with a slightly balsamic, long finish.

Think: crisp, zesty, but with body.

Perfect with:
Seafood is its best friend — grilled prawns, raw fish, shellfish, pasta with white fish, fresh cheeses, light risotto. Also great with cured meats and semi-hard cheeses.

It's a classic aperitivo w**e.

Italian Style Aperitivo served daily until 4pm.

HOT COFFEE JUST GOT AN ICY UPGRADE 📣

Barrel-aged. Single origin.
Steeped over 12 hours. Poured over ice.
The twist you’ve been waiting for.

Brady's aged coffee is matured in the highest quality oak barrels that were once used to produce some of Ireland's finest Wh***ey.

Using top-grade unroasted coffee beans, they aged them in used oak Irish Wh***ey barrels, rolling them every day for weeks, to infuse the Wh***ey flavour into the beans, before finally roasting them in small batches to ensure a perfect medium roast.

The result is a smooth cup of coffee, with a distinctive Wh***ey finish.

Ferragosto is an Italian public holiday celebrated every year on August 15. The word comes from the Latin Feriae Augusti, which means "the holidays or rest of Emperor Augustus". It marks the peak of the summer holiday season in Italy. It also match the Feast of the Assumption of Mary.

Check it out some of the savoury and sweet bite we do! offering some vegan or gluten free options, trying to be as much inclusive as possible 💖 Open daily from 8am.

Almost everyday we have our guests commenting how beautiful and charming is The Collector's playlist.

Behind every single song, there is Jim in action 😁🎶🎵

He loves his music and the most diverse genres.
Can go from the most popular band or singer to the very unique unknown tune (at least for me🤣).
It is impressive how he can jump from rock to classical, metal, pop, jazz, country, electronic, blues, or hip-hop.
Have i even mentioned all the varieties possible?!

It's so funny that every time we go somewhere with music on, he always makes comments about how good or bad it is for him😆.

There is always a nice track playing on Jim's time off or when we are at home together; and i have to admit, despite all the varieties i could possibly listen to, there is never a bad one on!!!

So thrilled to collaborate and have this pop-up bookshop on-going with the talented In the fold - pop up bookshop 📚

Lola did reach out a few months ago, and in July we started this successful partnership; loving the idea of having something unique in our shop, promoting local independent artists.

The bookshop proposes a curated selection of handmade publications by artists and free publishers, working at the section between illustration and print.

This week we've been back to some of the same places we discovered then, so special to us, celebrating the anniversary of what became the beginning of our Irish adventure ☘️
