I fondly remember when we first started baking for the shop, introducing all the homemade goodies.
I was so excited to see the first customers choosing and tasting the products I'd prepared. I was curious to see their expressions and hear their comments!
It's so beautiful and rewarding to see how people appreciate our food, bringing in work our culinary passion!
Mixing and matching traditional recipes with original creations - sweets desserts or crafting savoury snacks.

I met Jim in the UK about five years ago, working in a pub. I was managing the floor, and he was in charge of the bar. We loved it, and spent an amazing few years travelling all over Europe together whenever we had the chance.

Eventually our last day at work came, followed by our leaving party. It was emotional, surrounded by colleagues, family, and customers who had become friends over the years.

At the same time, we had been negotiating to acquire The Collector for around six weeks. Then, right in the middle of our final shift, we received a long email that began:

“Hi Fedi & Jim,

Let’s jump into the great news — we’d love to accept your offer!”

First I ran to Jim, then I did about a hundred laps around the pub in excitement. IT WAS HAPPENING.

On our very last day at work, we were able to share the news and celebrate the beginning of our new adventure with the people who had been part of our journey.

Let me tell you something. We jumped into the opportunity of taking over this business at the beginning of winter, and what a wild experience that has been!

We had just moved to Ireland, learning how quiet and laid back life can be in a small town. At the same time, we’ve been busy learning how to run a business for the first time and getting to know the community around us.

Overall, there always seemed to be something happening every month. A bank holiday, a special event, something nice to plan and look forward to.

Every day is different. Every week is distinct. Every month is unique. No two days are ever the same in a place like Kinsale.

And how exciting it has been to feel spring arriving. No more cloudy windows, but warm enough to leave the door open and enjoy those cozy rays of sun.

Everyone keeps telling us how hectic summer will be… and guess what?

We are ready to thrive.

August 2025. Me and Jim on the Scilly Walk, visiting Kinsale for the first time on holiday.

Only a few weeks earlier we had handed our notice at work, with no real plan yet, apart from a big trip to South America that came later in September.

While wandering through town we spotted that The Collector was for sale and became some of the first people to enquire about it. Whilst at Charles Fort, we got a reply and arranged to meet at the shop that very same day.

Everything started so spontaneously, and I love keeping this memory alive.
