Recipe Time : 10pm - The perfect time for a beautiful Baguette.


Any questions please feel free....

500g Strong Flour
320g Water
15g Salt
15g Yeast

1.Mix the yeast with the water, mix into the flour and salt and mix on medium speed for 7 minutes.

2.Form into a ball, and cover with cling film. Bulk proof for 1 hour, knock all the air out and repeat this step.

3. Divide dough into 3 balls of 270g each. Form into a long "sausage shape", rest for 5 minutes to relax the dough , and roll to desired length.

At this stage heat your oven to 250C, and have a oven proof dish ready filled with water, you will need to put the dish in the oven 5 minutes prior to the bread to create steam.

4.Place onto a oven tray lined with baking paper and lightly floured, cover lightly with a dishtowel, proof again for 45 minutes.

5.Score with a sharp knife, and let rest for 5 more minutes before going into your hot oven.

6.Bake at 250C for 13 minutes , open the oven and remove the steam bowl, flip the tray around and drop to 220C for 10 more minutes.

7.Remove and cool on a wire rack.

8.Enjoy.
