Stop guessing when it comes to w**e 🍷

White with fish isn’t a rule, it’s chemistry. The acidity works like a squeeze of lemon and keeps everything fresh.

Red with steak comes down to tannins binding with the fat, which is exactly why a Malbec next to something off our Josper oven works so well.

And the one nobody expects: chicken liver pâté with a dry red. The fat in the pâté softens the tannins completely.

Long before the dining room, the w**e and the steak, Martine was selling home brewing kits from her family’s shop window on Quay Street. Then she opened Ireland’s first w**e bar outside Dublin.

Today that same idea lives in the kitchen, where our head chef has spent over a decade treating every plate like it belongs on these walls.
