"Eurythmy"

In eurythmy, we try to let a sound move through us without getting in the way. In the kitchen, it’s the same, listening to the ingredients and following the natural rhythm of the task.

Whether it’s a gesture or a tray of hexagons, it’s just about being present in the movement.

Simple, honest practice. One shape at a time.

The Pullman Espresso Martini uses Di**le Distillery Irish vodka, espresso from Geometry Coffee Roasters in Tuam, a house-made coffee liqueur, and Guinness syrup.

Breaking from traditional ingredients, the focus remains on locally sourced elements throughout the serve. The coffee is single origin, bringing fruit and cocoa notes, while the liqueur and syrup add depth and richness.

What makes Ireland so special?

For our chefs, it always comes back to the people; warm, welcoming, and full of character, with a generosity of spirit that shines through in every interaction, whatever the weather may bring.

It’s the beauty of the landscape, the quality of the produce, and the traditions that bring it all together… with a little Guinness and plenty of craic along the way.

This St. Patrick’s Day, we celebrate the spirit of Ireland and all those who make it so unique.

Before the recognition, there was belief. We asked the team what achieving a Michelin Star would mean to them: validation of the craft, the discipline, and the standards they hold themselves to every single service.

On February 9th 2026, that commitment was recognised. The Pullman was awarded a Michelin Star. ⭐
