A year has gone by since Paolo’s passing. We are in disbelief that it’s been an entire year. A whole year without his guiding hand, without his input on the weekly specials, without his snarky comments about modifications to his dishes, without his laughter filling the room…

Myself and Asia threw ourselves in our work, and, honestly, it has never been busier. We know Paolo would have never wanted to see us down, that he would have wanted us to carry on, but it is also a harsh reminder that he is not here to give his input for any issue we may bump into, big or small. We continue to make him a part of any occasion or milestone, and we know he is here with us in spirit. People have often told us that they feel Paolo’s presence in the restaurant, which warms our hearts, because the restaurant and Paolo are one. Without him, I do not know that we would have ended up in Enniscorthy and built what we have had for nearly the past twenty years. Paolo was our rock, and he will always be.

We cannot thank everyone in our Via Veneto family enough for all of your kind words and support throughout this year. It really means a lot, especially to know how many lives Paolo has touched.

We look forward to seeing you during the Christmas period to celebrate Paolo and the man and father he was (which is exactly what he would have wanted - for us to find an excuse to raise a glass and drink in his honour!)

Today marks 6 months since Paolo’s passing. Half a year and it feels like yesterday that we last saw him. Time has not made it any easier to process the loss. The restaurant is full of daily reminders of him, whether it is his trinkets that fill every crevice or all his pictures over the years. As many of you have told us, Paolo’s presence is strong. We know he is here next to us, laughing along, or giving out, just like he always did, for minor changes made to his dishes!

Myself and Asia cannot thank every single one of you enough for reaching out, for keeping Paolo alive in your stories, for your support, and for your understanding. From the bottom of our hearts, we sincerely appreciate every single one of you. To quote Paolo, the restaurant was not created with the intent to just ‘serve food’. It was created to serve you, our extended family, an experience where it felt like home. We hope that we can continue in doing just that, and to bring our Paolo’s legacy forward.

Sono passati 6 mesi dalla scomparsa di Paolo. Mezzo anno e sembra ieri l'ultima volta che lo abbiamo visto. Il tempo non ha reso più facile l'elaborazione della perdita. Il ristorante è pieno di ricordi quotidiani di lui, che si tratti dei suoi gingilli che riempiono ogni fessura o di tutte le sue foto nel corso degli anni. Come molti di voi ci hanno detto, la presenza di Paolo è forte. Sappiamo che è qui accanto a noi, che ride insieme a noi, o che dà il suo contributo, come ha sempre fatto, per le piccole modifiche fatte ai suoi piatti, anche si ci ha sempre sgridato (a modo suo)!

Io e Asia non potremo mai ringraziare abbastanza ognuno di voi per averci contattato, per aver tenuto vivo Paolo nelle vostre storie, per il vostro sostegno e per la vostra comprensione. Dal profondo del nostro cuore, apprezziamo sinceramente ognuno di voi. Per citare Paolo, il ristorante non è stato creato con l'intento di “servire solo cibo”. È stato creato per servire voi, la nostra famiglia estesa, un'esperienza per sentirsi come a casa. Speriamo di poter continuare a fare proprio questo e di portare avanti l'eredità di Paolo.

Dear Customers, Family, and Friends of Via Veneto,

As many know, unfortunately, Paolo passed away last week. His funeral was held last Saturday in Italy, in his hometown Esperia. It took us all by surprise and we are still in disbelief. Paolo was a great man, a great boss, a great father, and a great person overall. There are not enough words to describe Paolo. He will be dearly missed by me, Asia, family and staff. He had a heart of gold and, from reading many of your sweet messages, it appears that many of you feel the same way.

I would like to thank everyone for the messages and kind words in this tough time. We will continue his legacy in the restaurant, although it will be hard without a mentor. We are back open from this evening, and I hope that laughter continues to fill the restaurant’s walls. He will always be in our memories, no matter what.

Come molti sanno, purtroppo Paolo è venuto a mancare la scorsa settimana. I suoi funerali si sono svolti sabato scorso in Italia, nella sua città natale, Esperia. Ci ha colti tutti di sorpresa e siamo ancora increduli. Paolo era un grande uomo, un grande capo, un grande padre e una grande persona in generale. Non ci sono abbastanza parole per descrivere Paolo. Mancherà moltissimo a me, ad Asia, alla famiglia e al personale. Aveva un cuore d'oro e, leggendo molti dei vostri dolci messaggi, sembra che molti di voi la pensino allo stesso modo.

Vorrei ringraziare tutti per i messaggi e le parole gentili in questo momento difficile. Continueremo la sua eredità nel ristorante, anche se sarà difficile senza un mentore. Da questa sera siamo di nuovo aperti e spero che le risate continuino a riempire le pareti del ristorante. Lui sarà sempre nei nostri ricordi, qualunque cosa accada.
