As many of you may know, we recently celebrated our 20th anniversary. We would like to take a moment to thank everyone for their continued support throughout the years – you are all part of the extended family by this point!

A lot of you have pointed out how it does not even feel like 20 years, and, trust me, we feel the same way! Seeing our customers who first walked through the doors back in 2006 with their children, fast-forwarding to 20 years later where their children are now continuing the tradition of dining at our restaurant.

Paolo was the driving force in us setting up in Enniscorthy. When we first moved to Ireland, we lived in Dublin, then in Louth, until one day Paolo decided enough was enough – he wanted to build something that was his own. There was an opportunity in our beloved county Wexford. We drove down, and that was it. We knew this would be our next stop. We didn’t know for how long, but we are so grateful to still be here today, and, of course, it would not be possible without all of you.

Paolo wanted Via Veneto to be a place that people could feel comfortable as if they were at home. For him, we are thankful to all of you for having helped us make his dream come true.

A year has gone by since Paolo’s passing. We are in disbelief that it’s been an entire year. A whole year without his guiding hand, without his input on the weekly specials, without his snarky comments about modifications to his dishes, without his laughter filling the room…

Myself and Asia threw ourselves in our work, and, honestly, it has never been busier. We know Paolo would have never wanted to see us down, that he would have wanted us to carry on, but it is also a harsh reminder that he is not here to give his input for any issue we may bump into, big or small. We continue to make him a part of any occasion or milestone, and we know he is here with us in spirit. People have often told us that they feel Paolo’s presence in the restaurant, which warms our hearts, because the restaurant and Paolo are one. Without him, I do not know that we would have ended up in Enniscorthy and built what we have had for nearly the past twenty years. Paolo was our rock, and he will always be.

We cannot thank everyone in our Via Veneto family enough for all of your kind words and support throughout this year. It really means a lot, especially to know how many lives Paolo has touched.

We look forward to seeing you during the Christmas period to celebrate Paolo and the man and father he was (which is exactly what he would have wanted - for us to find an excuse to raise a glass and drink in his honour!)
