⬇️ 📖

A Brazilian Catuai with depth and sweetness: this lot from Soró da Silva is a perfect example of modern Brazilian flavour. Soró is a passionate farmer and together with the community of the Cachoeirinha Valley is able to put quality and sustainability at the heart of production.

The Cup

Rich and balanced, this Catuai offers notes of chocolate, hazelnut, and praline. The profile is full of sweetness, striking the Brazilian notes we find irresistible. Smooth texture and gentle acidity offers an ideal base for black or milk coffees.

The Farm

Soró da Silva and his family have been instrumental in raising coffee standards in the Cachoeirinha Valley. Together with neighbouring families, the work to both care for the landscape and promote quality.

Since 2008, this has been helped by their collaboration with FAF - Fazenda Ambiental Fortalezza. FAF was founded with quality and sustainability at its heart. In 2001, Silvia Barretto embarked upon a sustainable transformation of land that had been in her family for generations. Turning away from mechanisation and chemicals, she began producing coffee in a way that prioritised the environment. While production quantity reduced, quality soared and FAF is now working with more than 200 farms.

The Process

In contrast to many commodity focused Brazilian farms, farms working with FAF ensure their coffees are meticulously hand picked. Ripe cherries are harvested, sorted, and for our naturally processed lot, slowly dried on raised African style drying beds. With the outside fruit of the cherry left intact, this gentle process ensures the development of sweet, aromatic flavour.

Process: Washed

⬇️ 📖

In Huehuetenango, cooler mountain temperatures are balanced by warm winds that blow over from Mexico. The long dry summers allow for even drying, producing a superbly balanced cup with irresistible sweetness.

The Cup

Los Naranjales is a coffee for any occasion. With rich notes of vanilla, chocolate, and malt, alongside a hint of zesty blood orange, this is a coffee that carries itself perfectly on its own or in longer drinks with milk. Careful processing creates a profile that is smooth, balanced, and extremely sweet.

The Farm

Francisco Morales got his passion for coffee growing from his grandfather, who planted 100 coffee trees when he was just 14 years old. Francisco himself started his own farm with 9000 seedlings he grew in a nursery in 1977.

The close proximity of the estate to the Mexican border gives the farm great climate conditions. Good sun, winds and rain. The heat is coming from Mexico and the high mountains of the Huehuetenango Plateau brings down temperatures at night. Dry long summers are stressing the trees so that they deliver good production.

The Process

Francisco is using 50% shade drying to gently work with his coffees. It prevents them from cracking and so this coffee keeps all his delicious flavours. Fermentation in cherries is stretched to 40 hours which gives our Lot strong character.
