For tonight's bake, I've made a trio of macarons. Coffee & chocolate, with dark chocolate ganache and coffee swiss meringue buttercream. Chocolate raspberry, with dark chocolate ganache and raspberry jam infused swiss meringue buttercream. And biscoff, with biscoff swiss meringue buttercream.

I rarely say this, but I'm absolutely delighted with my bake today. The macarons are the right amount of crispy and soft, and the tastes all blend super well together.

It's pretty hard to make a burnt basque cheesecake look good, but I've done my best. I didn't want to decorate the top and cover up the characteristic caramelised top. I promise this tastes much better than it looks.

I know, I know. It looks totally wrong. But I promise that if you Google burnt basque cheesecake, you'll see that it's right 😂

Tonight is a chocolate orange meringue tart, with orange curd, chocolate ganache, and torched cocoa meringue, all in a pate sucree base. I'll be honest, I'm not really happy with this one, but I've been assured that it tastes lovely so it'll do. Can't win em all!

I couldn't decide on flavours so I made two - kinder bueno and chocolate pecan.

Chocolate pecan are topped with dark chocolate, and there's dark chocolate and pecan inside the oats. Bueno have chopped roasted hazelnuts throughout, with little bits of the Bueno filling, topped with milk chocolate and the Bueno swirled through.

Anyone for a cup of tea and a hobnob? I actually tried slice and bake biscuits this week too, but I wasn't happy with the result. Luckily, I also made hobnobs because I was feeling extra.

Don't let the mug fool you, my husband might argue that Barry's is the best tea, but it's an ongoing war in our house.

We're back folks! This week is a chiffon sponge, rolled around a Swiss meringue buttercream that's as light as air, as well as some raspberry jam, balanced with some lovely sharp homemade lemon curd.

Would Paul & Prue read me for filth for not having a full sponge twisty roll bit visible? Absolutely. But here's the thing - I wanted to have more slices to share, so I rolled the sponge longways on purpose 🤷 This isn't really bake off, after all.

I'm a Swiss meringue buttercream convert, it's beyond lovely. This is my first time trying a piped sponge design and while it's a bit of a faff, the result is also lovely, and it gave me an excuse to remind myself how to make paper piping cones, so it's all a win win.

I'm not too happy with this as a final bake. The flavour in the top tier isn't balanced, and the decoration isn't as nic...

I'm not too happy with this as a final bake. The flavour in the top tier isn't balanced, and the decoration isn't as nice as I would like. But hey, I did it! Despite the busy weekend and a busy day, I did it.

There's two flavours. Top tier is black tea, bergamot, and orange, with passion fruit curd and vanilla buttercream, the bottom tier is chocolate and Belgian chocolate buttercream. The whole thing is decorated with whipped white chocolate ganache.
