Coming up for air after quite the crazy week…
We are so proud to have received a Michelin star for 2022. It is a huge honor to be recognized by the guide and to be listed alongside so many restaurants that we admire in Ireland & the UK.

Continuing our meet the team series…
This is Fionn. He joined the Bastible kitchen team as a part-time chef while still in school but has now confidently risen to the challenge of full time work. Fionn is a talented young chef (especially with all things bread related) and plans to go to college in DIT to further his career in the food world. It will be very interesting to watch his career progression.

In his spare time he loves to travel, cook for his family with all his fancy gadgets or listen to incredibly loud electronic music.

Thanks for all your hard work Fionn 🙌

Pictured is one of the courses from our current menu. The sea trout fillet is cured in a juniper & pine salt and lightly smoked over hay, before being very gently cooked under the grill. Along the way, it is brushed with an apple glaze that has been spiked with a pine vinegar.

The trout is served to share with homemade crumpets, fermented gooseberry salsa, smoked yoghurt and trout roe.

Thankfully we are now back open for dinner from Wed-Sat from 5:30pm until late.
