I’ll be one of the guest speakers at CRAICADEMIA in Rascals Brewing Company. I’m really looking forward to it (although I’ll admit I’m a little nervous! 😅) and can’t wait to chat about my life, my love of traditional Irish food, and what makes me tick.

Ernie's @ Shackleton Experience & Shackleton Experience Athy will be open late for Culture Night | Oíche Chultúir !
At Ernie’s, we’ll be offering samples of The Explorer Brack and serving Bovril. Did you know that Shackleton was once a poster boy for Bovril?!
🧭The ground floor will be open to the public, free of charge.
⚠️ The Shackleton tour must be booked in advance.

Thank you so much & for putting on such a great masterclass with today in the Athy Food, Drink, and Skills Innovation Hub.

The purpose of today was to look at how food can help share and tell a story. From providence & sourcing to flavours, textures and style it can all help tell a story.

We have a rich story to tell in Athy, especially when focusing on the Story of Ernest Shackleton. I am proud to tell that story in which is in . I am full of ideas and look forward to sharing that story in a much stronger way.

I’m still taking this in… 💛

To be named this year’s Producers’ Champion by truly means more than I can put into words. To be recognised by the very producers I admire, work with, and try to support every day is an honour that feels incredibly special.

Everything I’ve done, from the to my books to sharing producers online in my A-Z, has come from a genuine love of Irish food and the people behind it.

We are so lucky in this country to have such passionate, talented makers, growers and creatives, and I’ve always just wanted to shine a light on that.

Thank you to everyone who nominated me and to this amazing community for trusting me to help tell your stories. I’ll continue to champion you in every way I can.

And to Daithí, none of this happens without you. ❤️

Here’s to celebrating Irish food, supporting local, and continuing to build something really special together 🇮🇪

Welcome back to my A–Z of Irish Food Producers, this week, we’re on the letter I! 🇮🇪

I’m sharing a simple and wholesome favourite from my book Cook: Porridge & Yogurt Bread, made with natural live yogurt from .

It’s incredibly easy, just mix everything together and bake in a lined 2lb loaf tin at 175°C for 45–55 minutes.

Ingredients:
350g porridge oats
500g natural yogurt
1 egg, beaten
2 tsp bicarbonate of soda
1 tsp salt
50g mixed seeds
A dash of milk, if required

That’s it, no fuss, just good, honest baking.
I hope you enjoy it, and if you give it a try, I’d love to hear how you get on!
