The Seven Red.

Original 7 love beer, but they love good beer even more. A craft brewery out of Cork who won four World Beer Awards in their first year of brewing - and who make the pale ale we pour here. So, we built a drink around it.

Roe & Co Irish whiskey, sweet vermouth, Campari, Original 7, cherry, fino, rhubarb, tonka, white wine. Stewed fruit, marzipan topped with cherry soda.

Echlinville.

Long before the Woven Stone, there was the partnership. Echlinville have been distilling on the Ards Peninsula since 2013 - barley grown, harvested and malted on their own farm, spirits made properly from the ground up. When it comes to the people we build with, they don’t come more trusted.

So when we made a drink around Weavers, it was never going to be anyone else.

Our great friends at Echlinville have been distilling on the Ards Peninsula since 2013, barely grown, harvested and malted on their own farm. Field to bottle, done properly. They also make our house spirit, so this one runs deep.

Weavers gin, burnt yoghurt, peach, apricot, lemon. Tastes like sour jellies, stone fruit, peach yoghurt.

The countdown is on.

15 days until BAR 1661 is back at irishhouseus for Tales of the Cocktail 2026 and this year we’re bringing two bars.

Thursday 23rd July: BAR 1661 x Mad March Hare Killowen Distillery & Pangur Irish Poitín, while The Sackville Lounge teams up with The Boatyard Distillery.

Five years ago, Annie took her place on our front door. Tonight, she’ll work her last shift.

If you’ve visited BAR 1661 over the past five years, chances are you’ve been welcomed by Annie. She has been the first face through the door for thousands of guests, setting the tone before a drink was poured and helping shape the experience that has become synonymous with our bar.

Front of house is about far more than greeting people. It’s about warmth, care, calm under pressure and making every guest feel like they’ve arrived somewhere special. Annie has done that, night after night, with effortless grace.

While tonight marks the end of this chapter, she’ll always be part of the BAR 1661 family. We’re incredibly grateful for everything she’s given this place, and we’re excited to see where her next adventure takes her.
