No Knead Bread.

300g White Flour (preferably Bread Flour)
200g Wholewheat Flour
150g Mixed Seeds (Sunflower, Flax, Sesame, Chia, Pumpkin, Uncooked Quinoa etc.)
600ml Water +/-
12g Dry Yeast
1/2 tsp Salt

Mix everything in the large bowl.
Cover and leave for about 30 - 40 min.
Mix again.
Line 1 large or 2 smaller baking tins with baking paper.
Put bread mixture in the tin/tins.
Cover and leave to prove for 20 min (in Singapore), 30 - 40 mins in cold climate.

Tip.
If you use only White Flour, reduce water to 500ml.
Quantity of water depends on flour, sometimes you may need less, sometimes more.

Bake about 40 mins, 220C, fan, bottom heater.

How to make cottage cheese at home?

Method 1

2 litre of milk
2- 3 tbsp of lemon juice

Heat milk, up to 80 - 90 C - do not boil.
Add 2-3 tbsp of lemon juice and mix well.
I added juice of whole lemon.
Cover the pot with lid and leave for about 20 - 30 mins (gas/hob off!).
You will see milk separating from whey - see the picture.

If you have muslin cloth at home, put it in your sieve, if not strain your cheese directly on the sieve, cover it with plate and leave for another 20 - 30 mins.

Store in the fridge until cool.
Cheese might be a bit dry. Add a bit of yogurt, cream or milk to loosen it up.
Add salt, garlic, herbs or serve it with honey and walnuts.
Delicious, fresh, no preservatives and cheaper than the store bought.

From 2L of milk = about 500g of cottage cheese.

Method 2

2L of milk.

Leave milk in an open carton (put the lid back on but don't close it fully) on the counter for about 2, 3 days depending on your room temperature. Milk must go sour. It will smell sour but it should't go really bad as this would result in sour cheese.

Heat milk up to 80 - 90 C - do not boil.
Cover the pot with lid and leave for about 20 - 30 mins.
Proceed as above.
From 2 L of milk = about 380 g of cottage cheese.

Personally, I think the first method is better. Faster, more cheese and it tastes better.
