2026 🎆

Participated to our 3rd Dublin Coffee festival over the weekend where our full coffee offering was on display. Filter and espresso. Thanks for all who stopped by, we were flooded with coffee nerds the whole weekend!

Great event organised by lots to do and see including competitions, coffee talks, coffee cuppings coffee workshops and of course a taste of the fantastic Dublin Coffee scene in all its full glory!

Special shout out to whose designs were on display as holographic visuals.

Galway tasting!

For anyone that will be in Galway tomorrow Thursday 12th February we are holding a coffew cupping event at 5:30pm at Plámás, Dominick Street Upper, Galway.

We’ll be showcasing our current filter coffee offering so if you’re in the area be sure to pop in for some coffees and chat. Expect coffees from Colombia, Costa Rica, Ethiopia, Kenya and Uganda with all sorts of processing and coferments!

Appreciation post for our Silly Simon 🍄 It’s not only our most popular coffee as voted by you guys but this coffee is so an unsung hero with serious impact ❤️

Our washed chocolaty Silly Simon espresso starts its journey in San Agustín, Huila Colombia, in a small region called Alto del Obispo—a place known for incredible coffee and an incredible community.

For over 30 years, local farmers here have grown exceptional coffee under ideal conditions. In return, long-term partnerships helped make something special possible: a community childcare center built for farming families.

Today, that center—El Cafeterito—provides:
👶 Childcare for up to 50 children (and up to 80 during harvest)
🥣 Infant nutrition programs
🤍 Support for parents so they can work the farms knowing their kids are safe and cared for

When you brew Silly Simon, you’re not just tasting a Colombian single-origin espresso—you’re supporting families, children, and the future of a coffee-growing community.

Meet the baristas!

Our current barista setup at Groundstate Coffee! Aren’t they gorgeous?! Rebecca and Diego. Rebecca is our full time barista legend. With a several years experience under her belt, she’s cheerful and chill under pressure and takes her time doing things right. And always with a smile!

Coffee guru Diego after a hiatus is back with us. The powerhouse is back pouring the fluffiest flat whites, and the funkiest filters and the most succulent spros!

Subscriptions!

Getting out the monthly subscriptions to you today. Belated Happy New Year wishes!! This month our New Mexico espresso “Pedro’s Cactus Dream” is kicking off the year’s subscription coffees!

A washed espresso of the yellow bourbon variety. Hailing from the Sierra Sur Mountains of Oaxaca, Mexico via network of skilled smallholder producers farming high in the Sierra Sur region.

Tasting Notes: Toffee + Cherry + Chocolate + Raspberry

Thanks for all the new subscribers that joined the gang over Christmas. You can choose either espresso and filter with our monthly coffee club and also the amount of your choosing 250g or 1kg etc and we’ll send out each month showcasing incoming coffees throughout the year.

CHRISTMAS MESSAGE 🎅

Merry Christmas to all our customers of the cafe and roastery!

Looking back at 2025 it has been our busiest year yet, we are all so thankful and your support means so much to us and our team. Congratulations to for placing 1st place at the Mercanta Europe Roasting competition 2025. Congratulations also to our sister cafe on opening in 2025 and garnering such a great following and absolutely killing it with coffee and food alike if we do say so!

Looking forward. This coming year 2026 you will find us at the and the and of course will be visiting coffee estate in Costa Rica with the 1st placed prize having won their roasting competition in Berlin last September. Vitoria will report back from Costa Rica with all she has learned. We have some awesome new coffees on the way in 2026 from .coffee

For now we’ll get rest recharge and see you back again in 2026 with renewed energy and new ideas to progress and learn and grow as a team 🫶
