Cupping with the Climpsons!

We were checking our palettes this week!

We did a cupping session: tasting some teas against some coffees.
There's plenty of slurping involved and then trying to identify what you are tasting. Blind tasting: origins of the coffee, what processes has it been through...
There is always plenty to learn!

As always, so nice to have our friends Natasha and Max, swapping East London for Dublin for a few days.

We had to have some pizza and beers after, of course!

A long overdue visit to the beautiful Ballyfin Demense today, to meet the team for some tea training.
We are so proud to work with Ballyfin ever since its incredible refurbishment to become the luxurious house and grounds it is today. We supply a selection of our loose leaf tea for their tea service for their guests, including the very popular Ballyfin Blend.

The entrance driveway is epic....and that's only the start of the opulence in store

Another really enjoyable visit to the team at today. We held a tea training and Kombucha discussion in the beautiful surrounds of The Oak Room. (The views outside were pretty breathtaking too.)
Lots of enthusiasm for more tea knowledge and how we can continue to bring beautiful teas to the afternoon tea offering in The Gallery and maybe some inspiration for the Adare Manor Chocolatiers too!!....

Team training Day and Eve

We had a day's training with our roaster friends yesterday. Barista training by day and coffee cupping in the evening.
Our Team are buzzing today. Always lovely to hang out. Work but not work sort a thing. Our baristas are celebrating their great palates, after a successful blind tasting too 😁

ICE TEA RECIPE

☀️☀️We want to share our Iced Tea recipe with you☀️☀️

Perfect for a sunny, hot summer's day, when instant refreshment is required!
Simple....but sooo good.
Why not give a try?

We like to go for that traditional strong black tea drink served with lemon and ice.
Using a Keemun Black Tea. (Check out our bio to purchase from our online store.)
This tea is from the Chinese province of Anhui. It is a leaf tea with some tannin acid and a dark red colour that makes a perfect tasting and looking ice tea.

To make 1 litre:
40g China Keemun
1 litre of filtered water.
1 Lemon

Rinse the tea with cold water.
Fill a jug with the loose tea and 1 litre of water.
Steep in fridge for up to 24 hours or as long you can wait!
Strain.
Serve with Lemons slices and plenty of ice..

Savour your cup a little more today, as we celebrate International tea day today!
Worthy of a celebration everyday, in our book, but it is important to honour and value the tea community far and wide and their work to cultivate the tea plant, the pick, sort and drying processes, to ensure you get that perfect cup.
We enjoy the small part we play in that...and here's to the many new and exciting cups to be had and tasted ahead ....

Genmaicha is an everyday tea, drunk in Japan.
It's a vibrant green sencha tea blended with toasted brown rice and it is nutty and delicious!
If you are already a green tea drinker or want to be and haven't been persuaded yet, this could be the tea for you!
We sourced this latest Genmaicha from a tea farm in Yame, through our friend .omma on her travels to Japan last year.
Water temperature is key to enjoying your green teas. We recommend brewing this with slightly hotter water than our sencha to enjoy those nutty notes in this beautiful cup of fresh greenness.

The C&P'ers got out for a late Christmas get-together this weekend....
Heading into our 13th year in business on South William St., we are so lucky with our customers, suppliers, but in particular we feel that we have the best hardworking team now and over all those years too.
Over Christmas, it's always so lovely to see the old C&P'ers pop in to say 👋 and let us know where they are now...

Thanks to our neighbours, , for looking after us so well last night...
