Swapping out standard chicken for tender, flaky salmon is hands down the easiest pasta upgrade. The trick to keeping it light without heavy cream is using Belmorso Extra Virgin Olive Oil, garlic, and a quick splash of white wine to pull up all those rich, seared salmon bits from the pan.

Toss in the sun-dried tomatoes and tomato pulp, let it simmer down, and finish with a splash of starchy pasta water to create a silky, glossy coating.

It comes together in about 15 minutes, but tastes like you stood over the stove all evening. 🍝✨
