trip to Northern Thailand where we visited a coffee farm in the Doi Chang area on the Thai / Burma border and where we went up through the clouds to see the coffee pickers!

From this to your morning cup. What you're looking at is coffee mid-transformation. Picked ripe, laid out to dry under the Brazilian sun, turned by hand so it dries evenly. Get this stage wrong and no amount of roasting saves it. Get it right and you get sweetness, clarity, character.

We went to Brazil partly to watch this happen with our own eyes. It's slower and more careful than most people imagine.
