Some moments remind us that a restaurant can become part of a family’s story.

A huge happy birthday to Conor Kavanagh, who celebrated his 23rd birthday with his Mum Mairead, Dad Shay and younger brother Eoin at Rasam.

Conor was only a few months old when Rasam first opened its doors in 2003. We still remember the little boy who would happily disappear under the table while the grown-ups chatted. Fast forward 23 years and, thankfully, he is now taller than his Dad Shay! 😂

It has been a privilege to watch Conor grow up, while also welcoming generations of the Walsh family through our doors. Mairead’s late Mum, Sheila, was one of our much-loved regular guests, and it is always a pleasure to see Deirdre, Maeve and the rest of the family too.

Three generations. Twenty-three years. Countless memories.

Thank you, Walsh family, for allowing Rasam to be a small part of your family’s journey. Happy Birthday, Conor—we wish you health, happiness and many wonderful years ahead.

Some chefs seek the spotlight. Others quietly become the reason guests return.

Meet Chef Surjeet Rana, our tandoor and bread specialist—the craftsman behind every perfectly blistered naan, every delicate kebab, and every carefully balanced marinade that leaves our kitchen.

Surjeet began his culinary journey at the prestigious Ashok Hotel in New Delhi, the flagship five-star property of the Indian Tourism Development Corporation. From there, he honed his skills at the Grand Hyatt before moving to The Lodhi, home to the legendary Indian Accent—one of the world’s most celebrated Indian restaurants and consistently recognised among the finest dining destinations globally.

In 2021, Surjeet brought that wealth of experience to Rasam.

The tandoor is often described as the heart of an Indian kitchen. It demands patience, intuition, precision and years of practice—qualities that Surjeet brings to work every single day. From marinating meats and seafood to baking every naan and roti to perfection, his hands shape countless dishes that reach our guests’ tables.

At Rasam, we believe great restaurants are built not only on recipes, but on the dedication of people who take pride in their craft.

Our homemade Kulfi at Rasam is no ordinary ice cream — and you only have to ask anyone who’s tasted it. 🍨

Fresh milk, slowly simmered with saffron threads, rose petals and cardamom pods, until every spoonful carries the perfume of an Indian summer. Served with creamy Rabri, soaked basil seeds and rose pulp, it’s less a dessert and more an experience — one that’s hard to put into words.

Today, we would like you to meet Chef Pankaj Kohli.

After graduating with a Diploma in Food Production from the Delhi Institute of Hotel Management & Catering Technology, New Delhi, Pankaj built his career in some of India’s finest kitchens. Before joining Rasam nearly eight years ago, he was part of the culinary team at Amaranta, the flagship Indian restaurant at The Oberoi, New Delhi, one of India’s most celebrated five-star hotels.

Calm, thoughtful and deeply committed to his craft, Pankaj believes that consistency is the true hallmark of a great chef. Over the past eight years, his experience, precision and quiet dedication have helped shape the standards our guests have come to know and trust.

A few things about Chef Pankaj :

🍽️ Favourite dish to cook:
Rasam Platter — “It brings together five distinct starters, balancing sweet, sour, salty, pungent and bitter flavours. I think it is the perfect way to begin a meal.”

🌿 One ingredient you cannot live without?
Vetiver root — “A special ingredient we use at Rasam. When infused, the root imparts a wonderfully earthy, aromatic character that gives a dish a depth of flavour unlike anything else.”

✨ What makes a great Indian dish?
“Patience. If you are rushing a dish, you will never achieve the depth of flavour it deserves. At Rasam, we believe in slow cooking and the traditional art of dum.”

👨‍🍳 Advice to young chefs:
“Give everything you have got in your first three years. Build a strong foundation and never stop learning.”

Today, we would like you to meet Chef Yash Thakore, our Executive Chef.

After completing a three-year diploma from the Institute of Hotel Management, Catering Technology & Applied Nutrition, Bangalore, one of India’s most respected hospitality institutes, Yash embarked on a journey through some of the finest hotel kitchens in India and abroad.

From the Taj Group in India and Boston, Massachusetts, to ITC Chennai and Marriott Ahmedabad, Yash’s talent and dedication saw him rise rapidly through one of the world’s most demanding hospitality industries. He went on to become Executive Sous Chef at Crowne Plaza Ahmedabad, before serving as Executive Chef at DoubleTree by Hilton Ahmedabad and later ITC Fortune Select Ahmedabad, prior to joining Rasam four years ago.

His journey reflects not only exceptional culinary skill, but also an enduring curiosity and an unwavering pursuit of excellence. Today, he leads our kitchen with the same passion, precision and deep respect for authentic Indian cuisine.

Over the coming days, we would like to introduce the remarkable people whose dedication, skill and professionalism have quietly shaped Rasam for over two decades.

Every chef in our kitchen has received professional culinary training and refined their craft in leading five-star hotels before bringing their experience to Rasam. Together, they represent decades of knowledge, discipline and an unwavering commitment to quality.

Today, we would like you to meet Chef Dayal Negi.

After completing a three-year craft course in Indian cooking, Dayal honed his skills at two of Delhi’s finest five-star hotels—The Imperial and Hilton—before joining Rasam in 2013.

Calm, meticulous and deeply respectful of traditional techniques, Dayal believes that great cooking is built on patience, precision and consistency. For the past thirteen years, his instinctive understanding of spices and slow cooking has helped shape many of the dishes our guests return for time and again.

Some guests become part of the story of a restaurant.

Sarah first came through our doors as a schoolgirl with her parents. Since then, we have had the pleasure of welcoming her back for birthdays, anniversaries, family celebrations and countless special moments along the way.

This evening, on a beautiful sunny evening, it was lovely to see Sarah once again, this time dining with her friends Sarah and Bria.

Thank you, Sarah, for your friendship and support over so many years. Watching guests grow, build friendships and continue to create memories around our tables is one of the greatest privileges of hospitality.

✨ Fresh Irish beets, slow cooked with Irish chicken and Rasam’s master blend of spices, creating a deeply comforting marriage of caramelised sweetness and aromatic Indian spice.

🍛 Light, nourishing and wonderfully easy to digest, this has quietly become one of those dishes that guests return for again and again. A flavour unlike anything else on our menu — or perhaps elsewhere.

On her last visit to Rasam, even Nigella Lawson gave it 10/10 and shared it on her own Instagram page. 🙏

A little bowl of comfort with a rather big reputation.
