This Chablis Premier Cru Les Vaucopins 2022 is a wonderful wine for summer at La Maison.

Located in Chablis, the highly respected Château Long-Depaquit was founded in the late 1700s and is part of the Maison Albert Bichot.

It is a very sophisticated wine with a lovely golden colour. It has notes of apricot and quince, candied fruit and caramel and a light toasted, even smoky flavour.

On the palate, it is very lively and minerally. It pairs well with a range of food but is particularly good with seafood.

This is Chef’s Roast Cod Provençale with Chorizo and Chickpea Cassoulet, Courgette and Basil served with a Roast Garlic and Saffron Aioli.
