Just a final note to thank all of our staff and customers, kiddies & doggies 🐶 over the past 2 years for making such a great spot for us to want to come and work.

If you haven’t already give a follow, there will be updates soon with what’s happening in the space. I’ve had a glimpse of things and it sounds pretty exciting 🤌

It pains me to do it, but we are selling this incredible oven. Please DM me for more details and share this post if you can. The oven is up on Done Deal etc but probably will get a bit more attention from industry here.

I’ve also got a truckload of Italian made black iron trays of different sizes.

So we’ve switched out the plate for a panini. We slathered our house made buttermilk roll in home made pesto and we overstuffed it with heirloom tomatoes and buffalo mozz. It’s impossible to eat. In the best way possible.

BACCALÁ FRITTO

The last time I had this on a menu I spelt it wrong(on takeover). I got a bit of a scalding on Twitter from some unhappy Italians and fair enough! But I’m no stranger to it and suffice to say I was a little embarrassed. I can only say excitement gets the better of me when menu writing and I escape into a world of rushed typos.

I first had Baccalá this way in Rome in Filetti di Baccalá quite a long time ago. And I was just off the back of discovering what salt cod was & how important it is in southern European cuisine.

This was a time where I was a young chef and I still shied away from words on menus I didn’t understand. Baccalá I suppose was my gateway word into food bravery (which isn’t actually a thing) and from then on I’ve never looked back. I had it in Lucca that same trip in a stew translated to ‘stockfish’ with fried polenta and I was blown away.

So, in Rome, to find it in the form of batter…. I was bloody delirious.

THIS IS FISH & CHIPS. Make no mistake. But I’ve hung and cured cod to give it that Baccalá edge. So it’s a little on the diff side of things.

It’s a belter. I recommend a lick of this on the mortadella slice. Works with the burrata. Works with any pizza.

POMODORO CON BURRATA

If anything pushes the balance between sweet, salty, heat, fat & acidity it’s this.

It’s so so moorish, so intensely flavoured with tomatoes & playful. Swirl the creamy burrata through the rice & roasted tomatoes and pick up the heat from the house made chilli oil (which you can ask for with your pizza)
