We've made some repairs to our pizza oven in and it hasn't been all rosey. The floor was breaking away a bit so we decided to fire cement that section and cover it with an 8mm steel sheet. Happy days, we thought. That'll fix it.
Well, with the intense heat the sheet eventually started to warp, reducing the fire's contact with the floor, and thereby reducing the fires's conductive heat into the floor. It also seemed to reduce the ovens overall thermal mass, which means more fuel, and a less than perfect performance. This is all pizza nerd stuff, and I expect a few people have scrolled already, but for those of you still here, I love you. Anyway, we tweaked our service to ensure each pizza was still as good as we can possibly make it, but we're not entirely happy.
We have another fix on the way; we'll be building in an additional floor on top of the existing one. This should help in two ways; gives us a fresh clean cooking surface free from cracks and breaks, and it will also reduce the dome height and the cooking space (it was quite big), keeping a more intense thermal mass and using less fuel. Until then, our pizzas are still coming out light, crispy and with those sexy leopard spots, so rest assured you will leave happy. I just wanted to share one of the background issues as an example of things that all small business owners lose sleep over.
