Next week, Paladar lands in San Juan, Puerto Rico, heading to the island to celebrate locality, community and collaboration with a special St. Patrick’s menu featuring distilleries from Puerto Rico and Ireland.

We’ll be animating the colourful streets of Old San Juan alongside .rum with Derek and the team. After Hurricane Maria devastated the island in 2017, they rebuilt from the ground up, travelling to Scotland to study whisky production and barrel aging before returning home to create something uniquely Puerto Rican. It’s a story of resilience we’re delighted to raise a glass to.

From Ireland we’re bringing our favourite native spirit, and the backbone of San Patricios, a signature drink that represents Paladar everywhere we go. Pangur Poitín from epitomises what’s so exciting in this category of spirits. We genuinely can’t wait to share it with Puerto Rico on St. Patricks Day and tell them about Brendan Carty’s remarkable distillery in the Mourne mountains.

We’ll also be collaborating with , the island’s only agricole rum producer. Their process is truly field-to-glass, growing their own cane, fermenting it, and distilling it on site. And no Puerto Rican-Paladar cocktail menu would be complete without including one of the oldest and most iconic spirit houses, , whose rum has helped define the island’s identity for generations.

Being a Latin American–inspired bar in Ireland means more than menus and music. What drives Paladar is the incredible Latino team around us, big love and big love to for their delicious poitín, the backbone of this cocktail.

Next week we’re Puerto Rico bound where we’ll be celebrating St. Patricks Day in San Juan with .rum and Pangur Poitín for what is sure to be a wild weekend!

Any kitchen is only as good as its team, and we feel incredibly fortunate to have Chef Bruno leading from the front.
A native of Natal on Brazil’s northeastern tip, Bruno has travelled and worked extensively across Europe before falling in love with Cork and settling there with his family.

Our new food menu is almost ready, and it’s going to be packed with bold Latin American flavours, creativity, and serious culinary expertise.

Making a return to the Paladar menu specially for Cork Cocktail Week, Macario is a sweet, spicy & smoky drink inspired by the legendary 1960 Mexican film of the same name. Altos Tequila Blanco and Del Maguey Vida Mezcal bring depth and warmth, Cocchi Rosa and prickly pear add a touch of sweetness, habanero a fiery kick, and Poachers Grapefruit Soda ties it all together with a bright, refreshing finish.

Incidentally, ‘Macario’ was the first Mexican movie to receive an Academy Award, and is widely regarded as one of the greatest Mexican films ever made.
