This summer gave us the opportunity to learn, what worked, what needed to change and how we wanted The Last Drop to operate.

Now it’s time to show everyone what The Last Drop is really about.

Over the next few weeks, we have plenty of exciting changes coming, including a brand-new menu. We’ve listened, and we know we haven’t always got everything right but we will always keep learning, improving and doing everything we can for Cobh and the people who have supported us.

We were absolutely delighted to welcome Robert Sheehan to The Last Drop Cobh.

Our Emma might have been just a little bit star-struck 😍😂 but by all accounts, what an absolute gentleman, so friendly, relaxed and happy to take the time for a photo.

A LITTLE SNEAK PREVIEW FROM OUR SISTER PROPERTY…

Some of you may already know that we’ve been quietly (well… not always quietly) working away on something new in Cobh.

Meet The First Drop — our sister property and the newest member of The Last Drop Collection.

What we originally thought would be a fairly straightforward project has turned into quite the adventure… but we’re finally getting there.

We’re incredibly excited to give you a little sneak preview of what’s been happening behind the doors.

And yes, we already know the question…

“WHEN IS IT OPENING?”

Please don’t ask us just yet… our nerves can’t take it. 🤦‍♂️

But we promise — we are nearly there.

The Last Drop has received incredible support from Cobh since we opened, and we genuinely cannot wait to open the doors of its little sister and begin the next chapter of The Last Drop Collection.

As the summer season comes to an end, many of our fantastic young team members are getting ready to head back to school and college.

They’ve been a huge part of what has been an incredible first summer at The Last Drop, and while we’ll be delighted to have many of them continue with us when they can, it means we now have opportunities to welcome some new full-time members to our service team.

We’re looking for friendly, reliable people who take pride in great hospitality and want to become part of The Last Drop team.

A massive thank you to everyone involved with Cobh People’s Regatta for giving us the opportunity to be involved and to sponsor the activities and trophies this Saturday.

The amount of work that goes on behind the scenes to organise a weekend like this is phenomenal. The committee and volunteers put in countless hours to make it happen, and they deserve all the credit for continuing such a fantastic tradition in Cobh.

For us at The Last Drop, it’s a privilege to be able to support events like this and give something back to the community that has given us such incredible support since we opened.

We’re delighted to play our small part, but this weekend is all about the people who work tirelessly to make the Regatta happen year after year.

Wishing the entire committee, volunteers, participants and everyone attending a brilliant weekend.

Introducing… The First Drop Cobh. ☕🍷

Today we’re excited to share the official logo for The First Drop, our newest venture in the heart of Cobh.

Many of you have been asking why the emblem looks familiar.

The answer is simple.

We never wanted The First Drop to be a separate identity from The Last Drop. We wanted it to be the next chapter of the same story.

That’s why we’ve kept the gold drop and the Trinity Knot at its heart.

The Trinity Knot has no beginning and no end. It symbolises unity, connection and eternity—values that perfectly reflect what we’re trying to build.

For us, it represents our connection to this incredible town, our team, our customers, and the belief that great hospitality is built on lasting relationships.

Whether you’re joining us for a coffee and pastry in The First Drop, or a meal and a pint in The Last Drop, we want both venues to feel like they’re part of the same family.

This emblem will become the symbol of The Last Drop Collection—a promise of quality, warmth and genuine Irish hospitality across everything we do.

The renovation has certainly been more challenging than we ever imagined, but we’re hoping to welcome you through the doors of The First Drop towards the end of August.

Thank you for the unbelievable support you’ve shown us so far. We genuinely can’t wait to begin this next chapter together.
