There are some experiences that are hard to put into words, & this collaboration between Fernwood and Jasper O’Connor & Katie Sanderson of White Mausu is one of them. It’s not just special it’s genuinely unique, not only in Ireland but arguably across Europe. Would it stand up globally? Absolutely.
What Simon and Anne have created with their two wonderful children is nothing short of remarkable. Fernwood is a true celebration of ecotourism in Connemara understated, low key, exceptional in every sense. It’s generous, thoughtful, and quietly luxurious. Proof, if ever it were needed, that “luxury eco-tourism” is no contradiction.
And then comes the collaboration with Katie and Jasper blending with such ease. This is food that is local, grown, caught, farmed, and above all, loved. We had the pleasure of experiencing dinner there with friends, and it was one of those rare evenings where everything just clicks: the food, the setting, the people, the atmosphere, there was such a strong sense of community and joy, every detail considered, every plate meaningful. The crack, the banter, the laughter, the drinks it all came together to create something truly memorable. Honestly, it stands out as one of the most special dining experiences of my life. Real food, shared in a space that is simple in essence, yet beautifully and thoughtfully put together & in Connemara.
You’ll read about Fernwood, Katie & Jasper collaboration in publications across Ireland and beyond, but even that won’t fully capture it.
This is an eight week series, running until the end of May, on Thursday nights only. If you ever get the opportunity whether to stay at Fernwood or to experience the cooking of Jasper and Katie jump at it. Don’t hesitate. Just go. You won’t regret it.
And a special mention to Lilly and Johnny, whose extra hands in the kitchen have added so much, and who are soon to open what promises to be a very exciting bakery & more in Clifden.
Experiences like this don’t come around often. When they do, get in quick there’s a line of banking down the doors. Thank you all so much x

Dunno about you, but we CAN’T WAIT to pop on our pinny, roll up our sleeves & get down to the serious business of having some FUN with our friends & collaborators for this years festival.

There’ll be a stiff cocktail to start; then plates & bowls & boats & skewers & little cups of hot broth & well, we don’t want to reveal too much in advance. But suffice to say that the menu will “celebrate the island, the garden, the ocean & the season.”

Expect a hyper-local supper designed & curated by GLASGOW-DIAZ in collaboration with Connemara based nomadic pop-up THE SEA HARE .ie on Saturday 30th September 2023

The supper is a considered response to the project ‘Meat and Two Veg: How Eating Designs The World' by BothAnd Group

Meat and Two Veg - explores how a popular dish which is framed as 'local' by food marketing campaigns is rather produced across European and global landscapes. These contradictions are followed in the fieldwork which encounter Ireland's grass and carrot seeds produced in the Netherlands, its broccoli seeds in Spain and its potato tubers in Scotland. The research unveils the intensive synthetic character of European rural landscapes and presents us with places that have been designed by and for our consumption.

In the unique surrounds of Shanbolard Farm Potting Shed there will be a series of small plates that celebrate the island, the garden, the ocean & the season. Food for thought. Dinner without airmiles. A local story.

NOTE: Places are incredibly limited for this unique supper. If you would like to attend, please email your request to [email protected] & you will be entered into a draw - if your name is picked you will be sent a link to purchase. Submit application emails no later than 6pm this Friday 22.09.23. *tickets are limited to two per person and are €75ea

The location is on a working farm please wear suitable footwear & warm clothing.

Due to the nature of the event we cannot accommodate dietary requirements; this menu will feature meat, fish, dairy, wheat, eggs, etc
