New Chapter for AIMSIR Restaurant at Cliff at Lyons Estate

As part of its latest phase of investment, the two MICHELIN-starred AIMSIR Restaurant at Cliff at Lyons Hotel has begun recruitment for a new Chef Patron to spearhead the next phase of its development.

Current Chef Patron, Jordan Bailey and Majken Bech Bailey have decided to leave AIMSIR to pursue new ventures.

AIMSIR first opened in Summer 2019, and was awarded two MICHELIN stars within four months of opening. Since then, CLIFF owners Barry and Gerri O’Callaghan have committed a significant ongoing investment in the restaurant and its adjoining gardens.

Following the successful appointment of a new Chef Patron, the owners will also launch details of its new AIMSIR Innovation Hub. In doing so, AIMSIR is intent on creating a new centre of excellence, with the ultimate goal of achieving the restaurant’s third MICHELIN star in the near future.

Renewed ambition

Commenting, CLIFF Owners Barry & Gerri O’Callaghan, said:

“We want to thank Jordan and Majken for the part they have played at AIMSIR. In a very short period, the team at AIMSIR has achieved amazing things, establishing a restaurant of world renown. Their contribution to this success is recognised and respected by all of us and we wish them well.”

Barry & Gerri O’Callaghan: “AIMSIR has an ethos of creating exceptional cuisine utilizing indigenous ingredients found on the Island of Ireland. We remain committed to the exacting standards MICHELIN inspires, with a renewed ambition to become one of Ireland’s first three-star restaurants.

“We are currently in the process of advancing some exciting new developments, key amongst them is the appointment of our next Chef Patron. In doing so, we wish to challenge and inspire our AIMSIR team to deliver on our shared vision of achieving a third MICHELIN star.”

Jordan Bailey will welcome guests for his final service on Saturday, 15 April, with limited reservations still available for March and April. AIMSIR is then expected to close briefly to embrace the vision of the next Chef Patron, re-opening in May 2023.

Even when the restaurant is closed, Sunday - Tuesday, this doesn’t mean that everything stops

We take a couple hours over these days to forage for ingredients to use on the menu that week

We also look for new spots and check out old familiar patches to see what’s coming around the corner to plan for new dishes 🌲🌲

Our next booking release goes live this Wednesday the 1st of February at 12pm.

We will be releasing tasting menu for February and March, along with Overnight Experiences in April.

A gentle reminder, for the best chance of getting a table, ask a couple friends and opt for a table of 4-6 people. These tables are always a little slower to go than tables for 2 people for example.

Also, with our reservation system, Tock, it holds your booking for you for 10 minutes to allow you plenty of time to fill out your details. This way it eliminates a chance that your booking doesn’t get snapped up from underneath you.
This also means that 10 minutes after the booking window is open we may have a few tables pop back up available where people may have backed out of a reservation. So if it seems full booked just give it a few minutes, refresh and search again.

We are extremely excited to announce that we have paired with two of our wonderful Irish drink's suppliers, Origin spirits and Killahora Orchards, to produce a bespoke Cask Strength, Currach Single Malt Irish Whiskey

Made from 100% Irish Malted barley, it is a Triple distilled single malt Irish whiskey, initially matured in 1st American oak ex-bourbon barrels before being finished in Atlantic Kombu Irish seaweed charred virgin American oak casks. For this special bottling, the whiskey has then been given an additional finishing in a rare Apple Ice Wine cask, from Killahora Orchards in Cork

The Rare Apple Ice Wine cask adds wonderful sweet butterscotch and green apple notes which complement the rich roast coffee, dark chocolate and savoury umami flavours that the Atlantic Kombu seaweed charred casks provide

This is a very limited-edition bottling of just a single cask.

Tonight marks the last service of the year for us here at AIMSIR before we head away on our Christmas holidays to spend precious time with our loved ones

We will return on the 4th of January all energised, fresh faced, and spirits high. We cannot wait to see what 2023 will bring!

One of the decisions our guests have to decide when dining with us is their choice of beverage option

They of course have the option of our alcoholic and non-alcoholic pairings but they can also opt for a special bottle

This year we have put an emphasis on expanding our wine portfolio for our guests. Hand-picking the very best to pair beautifully with the food or to treat yourself to celebrate a certain occasion

Next year will be no different. We will keep our eye out and ears to the ground in the hunt for more beautiful bottles to add to the list for you to enjoy
