New Chapter for AIMSIR Restaurant at Cliff at Lyons Estate
As part of its latest phase of investment, the two MICHELIN-starred AIMSIR Restaurant at Cliff at Lyons Hotel has begun recruitment for a new Chef Patron to spearhead the next phase of its development.
Current Chef Patron, Jordan Bailey and Majken Bech Bailey have decided to leave AIMSIR to pursue new ventures.
AIMSIR first opened in Summer 2019, and was awarded two MICHELIN stars within four months of opening. Since then, CLIFF owners Barry and Gerri O’Callaghan have committed a significant ongoing investment in the restaurant and its adjoining gardens.
Following the successful appointment of a new Chef Patron, the owners will also launch details of its new AIMSIR Innovation Hub. In doing so, AIMSIR is intent on creating a new centre of excellence, with the ultimate goal of achieving the restaurant’s third MICHELIN star in the near future.
Renewed ambition

Jordan Bailey will welcome guests for his final service on Saturday, 15 April, with limited reservations still available for March and April. AIMSIR is then expected to close briefly to embrace the vision of the next Chef Patron, re-opening in May 2023.
