🌼🐝 The sun is shining, flowers are starting to bloom for spring and fields across Mayo are bursting with dandelions

✨Which means we have started making our Homemade Dandelion Honey✨

🌿It is a perfect vegan alternative to traditional honey and it has a variety of uses, whether that is to sweeten up your cup of tea or to add some sweetness into your home bakes

✨Our simple recipes for Dandelion Honey:

- 50g Dandelion Petals (yellow flower only)
- 500ml of water
- 1-2 slices of lemon
- 400g of sugar

Method:
- Rinse the petals and remove any green bits
- Add the petals, water and lemon to a pot and simmer for 20-30 minutes
- Strain the liquid and remove the petals
- Return the mixture to the pot, add in the sugar and simmer until it turns golden and thickens into a honey-like consistency
- Allow to cool and pour into your jar
