Why BORDO? The name started with a feeling.
Bordeaux — wine, food, long tables, gastronomy, and the pleasure of sitting down for a proper meal. That world stayed somewhere in Chef Stéphane’s mind when it came time to name the restaurant.

But BORDO was never meant to recreate Bordeaux in Bali.
Here, French craft meets what we have around us; Indonesian ingredients, spices, flavours and a little freedom in the kitchen.

You’ll find it across the menu: Spice Route Barramundi, the famous Steak & Frites served with homemade crispy French fries, reduced beef jus and beurre maître d’hôtel, Wagyu beef tartare with curcuma mustard, Seabass with beurre blanc and sambal matah, and dishes that don’t really need to belong to one country. They just need to feel like BORDO.

81 years of Indonesia. Three stories, poured into three glasses. This Independence Day, BORDO celebrates the flavours, memories and spirit of Indonesia through a limited cocktail collection created by our bartenders.

Red & Resolve — strawberry and Andaliman, inspired by sacrifice, courage and the richness of Indonesian spice.

Biu Mayang — pandan, banana and handwoven banana leaf, celebrating familiar local flavours, tropical abundance and the creativity of our people.

Ciung Wanara — bold, bitter, sweet and aromatic, inspired by the fire, determination and fighting spirit of I Gusti Ngurah Rai.

In Episode 1 of Bordo Stories, Chef Stéphane Simond shares the idea behind our table: Indonesian ingredients and inspiration, shaped by French craftsmanship and served with the warmth of Ubud.

We created Bordo to be more than another restaurant on Jalan Bisma. A place with its own character. A table where the food feels considered, the hospitality feels personal, and one visit gives you a reason to return.

But the Bordo feeling is difficult to explain from a video.
