Across Indonesia, many traditional sweets begin with just a few humble ingredients: rice flour and coconut milk. Serabi is one of the most popular examples. Rembang is located along the north coast of Central Java, it’s no surprise that petis (a rich fermented shrimp paste made from tiny ebi) finds its way into many dishes here.
In Rujak Jangan Petis, young chayote leaves, cucumber, long beans, bean sprouts and local greens are tossed with a bold dressing of garlic, chillies, tamarind, peanuts, palm sugar, sweet soy and that depth from petis.

From Medan, North Sumatra comes Gurame Goreng Tauco.
Gourami is one of Indonesia’s most beloved freshwater fish, known for its firm flesh. Here it is gently braised with shallot, garlic, chillies, galangal, lemongrass, salam leaf, palm sugar and fermented bean paste (tauco). The tauco brings depth and savoury richness, the gurame absorbs it all without losing its character.

What we wear carries meaning. Designed in collaboration with Atira, our uniforms reflect our commitment to celebrating Indonesian heritage. The silhouettes are inspired by the sarong (a garment worn across the archipelago, known for its fluid drape and versatility) and the baju bodo (one of the oldest traditional blouses from South Sulawesi, recognised for its clean lines and quiet elegance).

Just like the food we serve, it is a bridge between past and present. Tradition, interpreted for today.
