Poseidon's Torch. Kecombrang, coconut water, rosella kombucha, markisa, vodka. The name comes from the torch ginger at the centre of it. The rest of the glass follows its lead. Kecombrang is a Balinese torch ginger blossom, tart and floral, used in cooking and now finding its place in the glass too.

Tembaga was once a barn. The copper roof was added, and megalithic stone became the kitchen. Petrified wood from the founders’ collection was made into a bar. The open sides and coconut trees were always there, and the building was designed around them.
