What really happens during coffee roasting?
Roasting is one of the most important stages in coffee production because it’s where green coffee beans develop the flavors and aromas we love.
As the beans are heated, they undergo a series of physical and chemical changes. Moisture gradually evaporates, natural sugars begin to caramelize, and hundreds of aromatic compounds are created. During the “first crack,” the beans expand as steam builds inside a key milestone that signals the development of the roast.
The roasting profile temperature, airflow, and time is carefully controlled to highlight the coffee’s best characteristics. For Robusta coffee, the goal is to enhance its naturally bold body, rich chocolate and nutty notes, and pleasant bitterness while creating a balanced, enjoyable cup.
