Chef Fabio, an Italian chef born and raised in Tokyo, pursued his passion for cooking by traveling to Italy at the age of 16 to study abroad. He obtained an AISO Olive Oil Sommelier qualification at 19 and then trained extensively in restaurants across Germany and Italy for 6 years.

Upon returning to Japan, Chef Fabio worked as a chef at a top-notch restaurant in the Minoru Hasegawa Group. Now, he shares his expertise and creativity with the world by developing processed foods, writing, providing recipes, and creating content on social media platforms, including his popular YouTube channel, Fabio Eats. Through his work, Fabio aims to enrich people's lives with the joy of cooking.

We invite you to experience the art of a true Tokyo-style Kaiseki by Chef Hirotaka Kitano.

Our latest invitee, Chef Hiro, has perhaps the most unique culinary background yet among our pop up invitees — having been trained at the Culinary Institute of America, learning his trade at NYC’s French superstar Jean Georges (2 Michelin Stars) among others before returning to Japan to be second in command to a traditional Meguruo style 目黒流 Kaiseki master (with 2 Michelin stars as well) and finally now at his current post as executive chef at a very storied Saitama temple’s Kaiseki course.

This traditional multi-course meal is steeped in tradition and skill, with a focus on seasonal ingredients. From 15 until 19 March 2023, we will be serving a selection of our chef’s finest dishes during an exclusive pop-up event at The Sixth.
