Seperti janji saya dipostingan terdahulu, hari ini saya akan membicarakan tentang terasi yang merupakan salah satu dari sambal favorite saya 😜😜😜

Terasi terbuat dari ikan dan/atau udang rebon yang difermentasikan, kemudian langsung direbus di pinggir pantai, setelah matang, ditumbuk dan dicampur garam menggunakan lesung kayu, dijemur kembali agar kadar airnya rendah, kemudian ditumbuk kembali sampai bisa dibentuk, yang jadi ciri khas bentuk terasi. Terasi itu berwarna hitam-coklat dan memiliki bau yang tajam.

Terasi sering dikaitkan dengan sejarah berdirinya kota Cirebon yang ditilik dari penamaannya dalam bahasa Sunda yang berupa lakuran dari kata ci (air) dan udang rebon.

Di negara tetangga kita, Malaysia, bumbu masak ini disebut belacan .Thailand disebut kapi กะปิ.

Anda tentunya tau dengan masakan satu ini. Apalagi untuk pencinta sambal terasi. Tapiiiiii...... Terasi itu terbuat dari apa ya? Akan Saya bahas dipostingan berikutnya. Hari ini, Saya bahas dulu tentang kacang panjang ya. 😊

Kacang panjang mudah didapati di kawasan panas di Asia, tumbuh dengan cara memanjat atau melilit. Bagian yang dijadikan sayur atau lalapan adalah buah yang masih muda dan serat-seratnya masih lunak. Daunnya disebut dengan lembayung dan dapat dijadikan sayuran hijau.

Selain sebagai masakan, juga dapat digunakan sebagai bahan obat-obatan untuk mengobati beberapa penyakit seperti : antikanker, kanker payudara, leukemia, batu ginjal, meningkatkan fungsi limpa, kurang darah, sakit pinggang, rematik, pembengkakan, sukar buang air besar dan lain sebagainya.

Kacang Panjang juga merupakan sumber protein yang baik, vitamin A, thiamin, riboflavin, besi, fosfor, kalium, vitamin C, folat, magnesium, dan mangan.

Moravský Vrabec is Czech meal made from pork, cut into large pieaces, fry onion and crushed garlic, seasoned with caraway and salt.
Shortly fry on all sides, pour a little water, put in the oven and bake then serve with signature sauce. Emm.. Taste so incredible.

Zaklepavany Rezen is one of our 50's Chef creation made from boneless meat that has been thinned out with less moisture loss using a mallet that breaks down the fibers in the meat, making it more tender then rolling pin and beaten with the handle of merely butterflied. The meat is then coated with herb, egg and fried.

Another menu of 50's Kitchen. Yes, it is Quesadilla. Familiar with It?

Here, I will tell story bout it. Actually, the original Quesadilla is from Mexico and has changed and evolved over many years as people experimented with different variations of it.

Quesadilla is wrapping with tortilla, made of corn tortilla or wheat tortilla. They are usually cooked without the addition of any oil. Often the quesadillas are served with green or red salsa, chopped onion, and cheese is the most common filling. These can include cooked vegetables, such as potatoes with chorizo, squash blossoms, mushrooms and different types of cooked meat, such as chicharron, tinga made of chicken or beef, or cooked pork. In some places, quesadillas are also topped with other ingredients, in addition to the fillings they already have. Avocado or guacamole, chopped onion, tomato, serrano chiles and cilantro are the most common. Salsas may also be added as a topping.
