It was a privilege to see our artisanal cheeses featured as a dedicated course for the recent Disciples Escoffier dinner. In a room full of culinary masters, the focus was exactly where it should be: on the integrity of the ingredients.
From the delicate tuna tartare to the roasted Ichi-Gyu, every element of the night was about precision. We were proud to contribute a cheese selection curated by our own Chris Hayashi to complement that vision.
